I love cooking for special occasions, my family loves it too. So last family get together I made Bison Burgers Stuffed With Goat Cheese And Mushrooms. These rich burgers combined the leanest meat with the most decadent flavors of fried mushrooms and creamy, unripened goat cheese. Grandmother is insisting that I open a restaurant and serve all of the delicious things that I share with you on the blog. No. I like where I am at. I like making things and keeping a regular schedule of 9 to 5-ish. I love making delicious grilled food and learning about all things barbecue with everyone. Where was I going? Oh well.

Bison Burgers! They're so good and decadent and rich. The Napoleon Burger Press is super helpful in making these, all burgers are identically formed with the perfect divot for the cheese and mushrooms to nestle in. The burger press also takes forming time down quite a bit, and you're not handling the meat as much either.

Bison Burgers Stuffed

Serves: 4       Total Time: 35 Minutes + Chill Time

Ingredients

  • 2 lbs. ground bison meat
  • 1 medium onion, grated
  • 1 tbsp. Worcestershire sauce
  • 1 tbsp. cheddar cheese powder
  • 1 tbsp. onion burger seasoning
  • 2 tbsp. ice cold butter cut into small cubes
  • 1/2 cup soft, unripened goat cheese
  • 1 1/2 cups button mushrooms, sliced
  • 2 tbsp. butter
  • salt to taste
  • 4 buns for serving
  • condiments to your liking

Directions

Step 1
Heat a frying pan and melt the 2 tbsp. of butter. Add the mushrooms and slowly fry them so they're a caramel-y colour, don't let them burn. Set aside.
Step 2
In a large bowl, add the ice cold (not frozen) ground bison, or grind your own bison steaks. Grate your onion, and add the Worcestershire sauce, cheddar cheese powder, onion burger seasoning , and cold butter.
Step 3
Use your hands to mix the ingredients together. Don't squish the butter too much, you want pockets of butter to melt when you cook the burgers later. Use the Napoleon Burger Press to squish about 1/3 cup of bison meat into a patty. Use the divot-maker to make a cavity for a tbsp. of cheese and about the same of mushrooms. Flatten a little more meat to cover the stuffing and use the press to compress everything and seal the burger up.
Step 4
Repeat this step until the meat and/or filling is gone. Stack your burgers on a cookie sheet lined with waxed paper and chill the burgers for at least 30 minutes.
Step 5
Preheat your grill to about 450°F and grill your burgers for about 7 minutes per side over direct heat. Or until a meat thermometer reads 165°F.
Step 6
Serve the burgers on buns with your favorite toppings, or double the fried mushrooms and add onion for a great topping.

Bison Burgers Stuffed With Goat Cheese And Mushrooms are so good, even the really picky guy who won't eat anything unknown will eat it. No really! He was like this is good. I told him what was in it. He took another bite. It's still good. He's not going to trust anything I cook ever again mind you, but they were good. And when you bit into the burger it was good, but then you get to the melted cheese and mushrooms and you realize that burgers can, in fact, be creamy too. Mind. Blown. What food has blown your mind?
