Creamy Onion Poppyseed Dressing
Perfect On Spinach Salad

Serve with Lamb Sliders
- 2 tbsp. onion, minced or grated
- 1/2 cup of olive oil
- 2 tbsp. sour cream
- 1/3 cup apple cider vinegar
- >1/3 cup sugar
- 1 tsp. lemon pepper
- 1 tbsp. poppyseeds
- salt and pepper to taste
Grate or mince about half of a small onion.
Whisk together the cider vinegar, and olive oil to form an emulsion, then add the sour cream, onion, lemon pepper, and poppy seeds.
Add sugar one or two tablespoons at a time until you are happy with the flavor, add salt and pepper to taste.
Serve over a fresh salad. I prefer a spinach and arugula salad with pecans and cranberries.
Creamy Onion Poppyseed Dressing dressing also makes an excellent marinade and stir fry sauce if you're out of ideas for what to make. Just remember that this recipe is best when made fresh and used within a day or two.
