Fully Loaded Baked Scalloped Potatoes

These Fully Loaded Baked Scalloped Potatoes are a mouthful to say, but they're worth it. I mean, Scalloped Potatoes are already a near perfect dish with the cheese and sauce and potatoes all baked into some sort of heavenly feast. Then you go and add your favorite fixings for Baked Potatoes, bacon, chives, garlic, and sour cream. Stick that in your grill and bake it! I mean it! You have to try these potatoes!



Fully Loaded Baked Scalloped Potatoes

Serves: 10       Total Time: 75 Minutes

Ingredients

  • 6 to 8 large baking potatoes, like Yukon Gold
  • 10 slices of bacon, cooked crisp
  • 6 tbsp. flour
  • 1 cup of milk
  • 1 cup of 18% cream
  • 2 cups sour cream
  • 1/2 cup of chopped fresh chives
  • 3 cloves of garlic, grated
  • 2 1/2 cups of shredded cheddar cheese
  • salt and pepper to taste

Directions

Step 1
Using a mandolin slice the potatoes into thin slices. Bring a pot of water to the boil and boil the slices until they're nearly cooked through, about 5 minutes.
Step 2
Preheat the grill to between 350° and 400°F. Spray a 9 x 13 -inch baking dish with nonstick, or line it with tin foil and spray.
Step 3
Crumble the bacon. In a mixing bowl, whisk the flour and milk together. Add the cream and stir in the sour cream, garlic, and 3/4 of the chives.
Step 4
Place a layer of potatoes covering the bottom of the baking dish. Sprinkle with some of the cheese and bacon, then some of the milk-mixture. Repeat until you have filled the dish to the top with layers of potato, cheese, bacon, and milk-mixure. Make sure to reserve some of the bacon and cheese for topping.
Step 5
Top the whole thing off with a final layer of cheese, bacon and chives.
Step 6
Bake over indirect heat for 35 to 45 minutes, or until everything is heated through, crispy on top and nice and bubbly.
Step 7
Serve immediately with your favorite meal, like ham or steak.
I made these Fully Loaded Baked Scalloped Potatoes for a crowd, like seriously there were nearly 16 of us in total when all was said and done. It fed them all with leftovers, and THEY RAVED.
