Cooking an egg in an onion
- 1 red, green, yellow or orange pepper, or a large onion sliced into ½-inch thick rings
- 4 to 8 eggs
- salt and pepper to taste
- breakfast-y foods to go with eggs
Crack one egg per veggie ring into a bowl. Whisk with a dribble of milk, some chopped veggies and fillings and cheese.
Pour enough of the egg into the veggies to fill them.
Cook for a couple of minutes, flip and cook a little longer, until the egg has set.

Today is World Egg Day. This day was initially conceived of by the International Egg Commission in 1996, but is something worth celebrating. "But Sultana," I can hear you asking, "However do we cook eggs on the grill?" And I say unto you all... Use a griddle. Or a frying pan. That will also work. I know that many people have not been able to master the fine art of eggery. Or is it eggish-ness. Eggnosity? Well anyway, flipping eggs is not flipping easy. There is an art to it. But this recipe is a super simple way to get your eggs to come out right every time.
