Oh no! You made Bison Taco Salad for dinner last night but there's leftover meat! Bison Taco Stuffed Pepper to the rescue! Imagine a pepper, cooked to perfection stuffed to overflowing with tasty and lean bison meat, creamy gooey cheese, and salsa to make the whole thing complete. Actually wait! You have to top it off with cool and creamy sour cream and more salsa! NOW it's complete. This is fragrant, delicious, moderately healthy, and a great way to use those pesky leftovers without people knowing it.

Bison Taco Stuffed Pepper

Serves: 4       Total Time: 30


  • 1 lb. bison meat
  • 2 tbsp. Taco Seasoning
  • 4 tsp. oil
  • ½ cup of shredded cheese
  • ¾ cup of salsa (try my Ghost Pepper Salsa)
  • 4 whole green peppers, tops and interior veins removed
  • sour cream and more salsa for serving


Step 1
Preheat your grill to 400°F and prepare for indirect grilling.
Step 2
Brown the bison meat in a Cast Iron Skillet with the taco seasoning.
Step 3
Brush the inside and outside of the peppers with the oil.
Step 4
Toss the bison meat with the cheese and salsa then fill all of the peppers as full as you can.
Step 5
Bake the peppers over indirect heat for 20 minutes or until the peppers are cooked through and the cheese is all bubbly and melty.
Step 6
Top with sour cream and more salsa, and serve.
Another stuffed pepper recipe. Super yummy and well worth it. Not quite a taco, but not quite a super healthy crazy meal either. Just right. And if you’re taking it for lunch at work, your co-workers are going to be super jealous of your delicious meal.
