Wholesome and delicious, these healthy BBQ beef and grain bowls with bok choi will keep you full for a while. Succulent, marinated beef is sliced thin, served on a bed of whole grain rice, with grilled bak choi, carrot, zucchini, and roasted sweet potato. Portions are key to making this a successfully healthy meal, by going heavy on flavorful veggies, and lighter on meat and grains you get a super boost of fiber and vitamins.

Healthy BBQ Beef & Grain Bowl

Serves: 4 to 6       Total Time: 40 Minutes + Marinade

Ingredients

For the Marinade:
  •  3 tbsp. garlic, grated or crushed 
  •  2 tbsp. ginger grated 
  •  2 tbsp. sesame oil 
  •  ½ cup soy 
  •  ¼ cup honey 
  •  1 tbsp. sambal olek (or more to taste if you like it hot)
  • Flank steak 
  • 3 cups whole grain rice, cooked 
  • 4 tbsp. sesame oil, divided 
  • 4 heads of Bak choi, washed 
  • 2 carrots  
  • 2 zucchini 
  • 1 large sweet potato cubed 
  • salt and pepper to taste 
  • ½ of a red onion, sliced thin 
  • 1 tbsp. rice wine vinegar 
  • toasted sesame seeds 
  • green onion

Directions

Step 1
For the Marinade: Make a paste with the ginger and garlic, grating or grinding will do this easily. Add the sesame oil, soy, honey and sambal olek to taste. Place the steak into a nonreactive dish and pour the marinade over. Refrigerate for up to 8 hours.
Step 2
Slice the onion thin, toss with the rice wine vinegar and set aside until serving.
Step 3
Preheat the grill to 500°F. Place the Napoleon grill topper to preheat too.
Step 4
Start with the sweet potato, peel and cut the sweet potato into bite-sized chunks. Season with 1 tbsp. of sesame oil, salt and pepper to taste. Wrap in foil and place onto the preheating grill on the warming rack.
Step 5
Once the sweet potato is on the grill, wash and peel the carrot, then slice the carrot and zucchini into matchstick sized chunks. Season with 1 tbsp. of sesame oil, salt and pepper to taste. Slice the bok choi in half and drizzle with the remaining sesame oil.
Step 6
Grill steak over direct heat for 4 to 5 min per side, allow to rest for 10 minutes under foil. Grill the carrots and zucchini in a grill topper and the bak choi directly on the grill for about 10 to 15 minutes or until tender-crisp.
Step 7
Once completely rested, slice the meat against the grain as thin as you can. Assemble these bowls beginning with about 1 cup of rice, 2 to 3 slices of meat, and loads of veggies. Garnish with red onion, green onion, and toasted sesame seeds, and maybe some Sriracha.
