My mouth is watering as I type this. Seriously. It is probably the best thing I have ever done to a beef roast. EVER. When you need something hearty to eat but want to capture that feeling of summer too? These Barbecue Beef Sandwiches are the recipe for you. Winter eats for the summer person. Especially when served with some Autumn Slaw on the side.

Barbecue Beef Sandwiches

Braised Barbecue Beef
  • 3 lb. beef shoulder roast
  • 2 tbsp. steak spice
  • 2 tbsp. bone dust
  • 1 tbsp. mixed dried herbs like sun-dried tomato, parsley, basil
  • 1 cup of beef stock (you can use 1 cup water to 1 cube boullion, I won't tell)
  • ¾ of a can of dark beer
To Serve
  • braising liquid
  • ¼ cup molasses
  • 4 tbsp. ketchup
  • 3 tbsp. steak sauce
  • 1 tbsp. balsamic vinegar
  • +/- ¼ cup brown sugar
  • remaining beer if you didn't drink it
To Serve
  • 4 crusty sourdough rolls
  • mayonnaise
  • lettuce
  • onions (caramelized if you like)


Step 1
Oil the grids and preheat your grill to high.
Step 2
If the beef roast has a fat cap, score the cap in a diamond pattern down to the meat. Combine all the spices in a dish and coat the roast on all sides.
Step 3
Sear the beef roast on all sides until the outside has a nice caramelized coat, and some nice sear marks. While the roast is searing, pour any remaining spices into a dutch oven or a roasting pan.
Step 4
When you have seared the beef on all sides, move it to the dutch oven. Turn your grill down to med-low or around 300°F, preparing for indirect grilling. Pour the beef stock and ¾ of a can of beer over the roast.
Step 5
Cover the roast well and place the beef roast onto the grill over the “off” side of the grill to roast for 3 hours.
Step 6
When the beef is done, remove it to a heat proof dish and shred.
Step 7
Pour the remaining braising liquid into a sauce pot and bring it to a boil. Remove any beef fat that floats to the top, save this in the freezer, it will come in handy.
Step 8
Simmer the braising liquid and add the molasses, ketchup, steak sauce, vinegar, and brown sugar. Simmer the sauce until thickened.
Step 9
Once the sauce is thickened to your liking pour it over the shredded beef.
Step 10
Serve the shredded beef on a warmed or toasted sourdough roll with your favourite sandwich toppings, try some Autumn Slaw to go alongside it as well.
These Barbecue Beef Sandwiches are so good, why you ask? Well I'm not quite ready to give up the warmth and enjoyment of summer. I love the lazy days in the yard with the grill making my mouth water, listening to the people enjoying the outdoors while I bask in the glow from the sun. After a day of grilling, something delicious comes off of the grill and just makes the evening that much more special. Wow. Do I ever sound like a commercial. Anyway. I know that the cooler weather is coming. But I want to hold on to that summer feeling. BUT I need something that is a little more stick to my ribs 'cause it's so cold. BUT I DON'T want to give up summer! These Barbecue Beef Sandwiches are a delicious balance between both worlds. Served up on warm and crusty sourdough bread, topped with your favourite toppings. It's stick to your ribs food, but it reminds you of the glorious days of summer.
