Homemade Avocado Ranch Dressing
Oil Free Salad Dressing

Look at all that freshness
- 1 ripe avocado
- 1 cup plain coconut yogurt
- 1 shallot, minced
- 2 to 3 tbsp. fresh dill, chopped
- 2 tbsp. fresh chives, chopped
- 2 tbsp. fresh parsley, chopped
- 4 cloves roasted garlic
- ¼ cup white wine vinegar
- salt and freshly ground pepper to taste
- red pepper flakes (optional)
Preheat your grill or side burner to high, about 500°F, for searing.
Slice your avocado in half and remove the pit. Place the two halves of the avocado, face down, over direct heat, until delicious sear marks form. Remove from heat and allow to cool while you assemble the rest of the ingredients.
Add all ingredients, except for the salt and pepper, to a blender or food processor, including the avocado. Blend on high until the mixture is smooth. Sample and add salt and pepper to taste. You can also add red pepper flakes for extra oomph.
Serve over your favorite salad or use as a dip for chips and fresh vegetables. Keep in a squeeze bottle for easy addition to your favorite salad, or topping for your favorite foods.
