Maple Miso Double Baked Sweet Potatoes

The perfect side to your favorite meal
- 4 medium sized sweet potatoes (fist sized)
- 1 tbsp. butter
- 2 tbsp. maple syrup
- ½ tsp. miso paste
- ½ to 1 clove of black garlic,
or ¼ tsp. garlic powder
- salt to taste
Preheat your grill to 400°F.
Scrub and dry your sweet potatoes. Place them onto the warming rack of your grill. Bake for about 40 minutes, or until the potatoes are tender when poked with a knife or fork.
Remove the potatoes from the grill. Leave the grill on though.
In a bowl, whisk together the butter, maple, miso and garlic. Slice the tops off the potatoes and scoop out the sweet potato leaving enough potato and skin to keep the potato’s shape.
Mash the sweet potato that you have scooped out, with the maple mixture, seasoning to taste with salt. Fill a piping bag, fitted with a large tip, with the sweet potato mixture and fill the scooped out potatoes.
Place the potatoes back onto the grill, baking again until the tops have crisped up a little and they’re once again hot, about 15 to 20 minutes.
