Kahlua Chocolate Cake with Strawberries & Cream was created in celebration of National Kahlua  Day and National Strawberry Day. How fortuitous is it that these two things would share a dedicated day. Mashing the two of these delicious flavors together was far easier than I had imagined. The sweet fresh strawberries, creamy icing, and dense cake come together for a flavorful dessert that is at once hearty and light.

Kahlua Chocolate Cake

Serves: 10       Total Time: 85 Minutes

  • 1¾ cup flour
  • 2 cups sugar
  • ¾ cups cocoa powder
  • 2 tsp. baking soda
  • 1 tsp. baking powder
  • 1 tsp. salt
  • 3 eggs, room temperature
  • ¾ cup of Kahlua, room temperature
  • ½ cup of whipping cream, room temperature
  • ½ cup of softened coconut oil
  • 1 tbsp. vanilla
  • chopped dark chocolate, optional
Creamy Icing
  • 1 cup of marscarpone cheese
(cream cheese if you can’t find it)
  • 1 cup of powdered sugar
  • 1½ cups of whipping cream
  • pinch of salt
  • 1 tsp. of vanilla extract

Step 1
Preheat the grill to 350°F, prepare to use the indirect grilling method.
Step 2
In a bowl, sift together the flour, sugar, cocoa powder, baking soda, baking powder, and salt. Add the eggs, Kahlua, whipping cream, coconut oil, and vanilla. Stir until just mixed. Then use a hand mixer or stand mixer to beat on medium speed for two minutes.
Step 3
Grease, then dust a bundt pan with cocoa powder to make removing the cake easy. Stir the optional chocolate into the batter, then pour it into the waiting pan.
Step 4
Bake over indirect heat for 45 minutes, rotating the pan about half way through the bake so that both sides get even heat. If a cake tester or toothpick comes out clean or with a couple of crumbs, the cake is ready.
Step 5
Allow the cake to cool completely before turning it out onto a plate and icing.
Step 6
To make the icing, mix the cheese, salt, vanilla, and powdered sugar together, then set aside. Use a stand or hand mixer to whip the cream until stiff peaks form. Gently fold the whipped cream into the cheese mixture.
Step 7
Generously top the cake with the whipped cream icing, then nestle fresh, hulled strawberries in the icing. Serve as soon as possible.

So tasty

Kahlua Chocolate Cake with Strawberries & Cream is dense yet light, the cake carries a hint of coffee and alcohol. The sweet cream icing is light and fluffy, packed with a subtly cheesecake-like flavor that compliments both the fresh berries and the delightful cake. It seems slightly counterintuitive to pair a coffee liquor cake with fresh strawberries, but it works. What flavor combination have you wanted to try, even if it’s a little strange?

Happy Grilling!
