I’m definitely on a soup kick; but can you blame me? It’s cold and flu season, and I have cooked plethora of roasted poultry. This Chicken Noodle Soup On The Grill is super easy. Overnight stock means that you can bring the soup together for a meal in about 45 minutes. What’s better than homemade chicken noodle soup on a chilly day or when you’re feeling under the weather? I can hear you all right now, “But Andrea, you can’t make soup on a grill,”. Well, you can, sort of. Watch me.

Chicken Noodle Soup

Serves: 8+       Total Time: 45 Minutes + Stock


Chicken Stock
  • 1 or 2 roast chicken carcasses
    (Try our recipe for the Easiest Rotisserie Chicken Ever)
  • water
  • 1 onion, cut into quarters
  • 2 carrots, scrubbed and broken in half
  • 2 stalks of celery, cleaned and broken
  • 2 cloves of garlic, halved, skin removed
  • 2 tsp. peppercorns
  • 1 tbsp. salt
  • 1 bay leaf
Chicken Noodle Soup
  • 14 cups of chicken stock 
  • ¼ of an onion, diced
  • 1 clove garlic, grated
  • 1 small carrot, julienned
  • 2 chicken breasts
  • 2 cups of dried noodles
  • salt and pepper to taste
  • 1 tsp. fresh dill
  • pinch of thyme


Step 1
Make homemade stock by placing the chicken into a 3.5-quart dutch oven. Preheat your oven (or grill) to 250°F. Add the onion, carrots, celery, garlic, peppercorns, salt and bay leaf. Cook, covered, for 6 to 8 hours. Allow it to cool enough to handle. Strain the liquid through a sieve.
Step 2
Preheat your grill to 400°F.
Step 3
Season the chicken to taste with salt and pepper. Grill over direct heat for 6 to 8 minutes per side, until cooked through, or an instant read thermometer reads 165°F. Remove from the grill and turn it off.
Step 4
Place a large pot over your side burner and turn it on to medium-low. Pour the homemade stock you created in to the pot. Add water or additional stock to the pot if you didn’t get about 14 cups when you made the stock.
Step 5
Add the onion, garlic, and carrots. Bringing the stock to a gentle simmer. Dice or shred the chicken and add that too. Taste the soup and season to taste with additional salt and pepper as needed. Add the dill and thyme.
Step 6
Add the noodles and cook for another 5 to 7 minutes, or until the noodles are al dente. You can use your favorite noodles for this, just keep the length of cooking in mind, as various pasta shapes require different cooking times.
Step 7
Serve hot with crackers or fresh bread and butter. You can also allow it to cool to room temperature for packaging and storage.

Chicken Noodle Soup On The Grill is super easy to make, especially if you make the stock in advance. When we ate this for dinner the other night, it was like traveling back in time to childhood days. Days of coming in out of the cold winter air after tobogganing, or when you got to stay home wrapped in blankets and mom took care of you.
