Maple Planked Salmon

Serves: 2       Total Time: 20 Minutes

  • 2 salmon fillets
  • salt and pepper to taste
  • 1 maple plank, soaked 30 mins
  • 1 cup of balsamic vinegar
  • ¼ cup of maple syrup
  • ½-inch cube of fresh ginger, grated

Step 1
Before starting, soak the plank in water for at least 30 minutes.
Step 2
Preheat the grill to 400°F.
Step 3
Combine the vinegar, maple syrup, and ginger. Bring to a simmer over medium heat, stirring every once in a while until the mixture coats the back of a spoon – about 15 minutes.
Step 4
While the balsamic mixture is simmering, season the salmon fillets with salt and pepper, then place onto the soaked plank. Grill over direct heat with the lid down for 15 minutes, or until the fish flakes easily.
Step 5
Serve this drizzles with the balsamic reduction. Add roasted veggies or a hearty salad for a healthy meal that the whole family will love.

Maple Planked Salmon with Balsamic Reduction is spectacularly simple and supremely satisfying. If you haven’t used up all of the reduction, it will keep for up to two weeks in the fridge and is great for a bunch of different uses like the not-as-healthy, Duck Pizza with Caramelized Onions, Candied Bacon & Balsamic Reduction. What’s your favorite healthy recipe for the new year?

Happy Grilling!
