Tasty Taco Pizza is so delicious. Like "how did I never think of doing this before," delicious. Or "I am making this again tomorrow night for dinner" kind of delicious.

Need I go on?

So I was toodling around the internet and was reading an article somewhere when one of those sidebar video ads starts blaring. It’s a cooking segment and they’re talking about Garth Brooks and taco pizza. I think they said that he invented it. Anyway, it was just a light bulb moment. I saw what the end product looked like and knew I just had to make something that amazing right away. As an added bonus, it’s Cinco De Mayo soon, and you can celebrate with some Mexican-inspired Tasty Taco Pizza too!

Tasty Taco Pizza

Serves: 4       Total Time: 55 Minutes

  • 1 recipe for quick pizza dough
  • corn meal for sprinkling
  • 1 lb. ground beef
  • 2 tbsp. taco seasoning
  • ¼ cup salsa, divided
  • ¼ cup of refried beans
  • 1 cup of shredded jack cheese
  • 2 cups shredded lettuce
  • 2 to 3 tbsp. sour cream
  • ½ of a tomato, diced

Step 1
Make the pizza dough ahead of time so that you’re ready for making the pizza.
Step 2
Place the Napoleon Pizza Stone on the grill and preheat the grill to 450°F using indirect heat.
Step 3
Brown the ground beef with the taco seasoning and two tablespoons of the salsa. While the meat is browning, combine the remaining salsa with the refried beans.
Step 4
Dust your Napoleon Pizza Spatula with a little corn meal to make transferring the dough easier. Dust the Napoleon Pizza Stone with a little more cornmeal and slide the raw dough onto the stone. Bake for 10 minutes.
Step 5
Remove the pizza dough from the grill and flip it over. Spread the salsa and refried beans mix on the dough, then top with the browned ground beef and ¾ of the cheese. Return the pizza to the stone and grill for another 10 to 15 minutes, or until the cheese is bubbly and melted.
Step 6
While the pizza is cooking, mix the cheese, shredded lettuce, tomato and sour cream so that everything is coated.
Step 7
Remove the pizza from the grill and top with the sour cream mixture. Slice and serve immediately.

This Tasty Taco Pizza turned out a bit spicy, but the sour cream and lettuce topping was the perfect juxtaposition. This meal was so good that we actually ate less just so we could take it for lunch the next day. It was also, so good that we made it again a few days later. Will you be trying this for Cinco De Mayo? Don’t forget to have some Garth Brooks playing in the background.

Happy Grilling!
