April 7th is National Beer Day. What goes better with beer than some Super Crunchy Onion Rings? Oh! I know! Beer Battered Onion Rings, that’s what! These cooked-to-perfection, golden, and crunchy rings of onion-y goodness are perfectly suited to sharing with friends with some cold beer. Don’t forget to dip them in some spicy dipping sauce too!

Super Crunchy Onion Rings

Serves: 4       Total Time: 85 Minutes


Dipping Sauce

  • 3 tbsp. horseradish mayonnaise
  • 1 small clove garlic, grated
  • 2 tsp. sriracha
  • 2 tsp. ketchup
  • salt and pepper to taste


Step 1
In a large bowl, combine the scant cup of flour with the Southern-style BBQ seasoning, salt and pepper. Pour in the beer and whisk until combined. Cover and refrigerate for 1 hour.
Step 2
Pour the remaining beer over the sliced onions. Refrigerate for an hour as well.
Step 3
While waiting, mix the dipping sauce in a small bowl by combining the mayo, garlic, sriracha, ketchup, salt, and pepper.
Step 4
Put remaining flour into a flat-bottomed dish, like a pie plate. Place your Napoleon Stainless Steel Wok over your side burner to heat about 3-inches of oil to 350°F or so. Turn one burner of your grill on to low, placing a baking sheet with a wire rack in it over indirect heat.
Step 5
When the oil is up to temperature, dredge each onion ring through the flour, then dip it in the beer batter. Fry one or two rings at a time until golden brown, about 1 minute per side, then place them in the grill on the wire rack to drain and keep warm.
Step 6
Serve with dipping sauce and friends.

I like to do any frying outdoors. You don't have to contend with the smell, and cleanup is far easier. Super Crunchy Onion Rings are easy.
