Squashed & Crispy Roasted Potatoes

We love potatoes in the Sizzle household. I mean you can boil ‘em, mash 'em, stick 'em in a stew, but when you really want a treat, I mean REALLY REALLY, these Squashed & Crispy Roasted Potatoes are AH-may-Zing! They're flavorful, fluffy AND crispy too! You can have these awesome potatoes too! Just follow along with the recipe below and you will have something super delicious in no time. Basically you should start them before you start anything else, throw them on the grill and when the timer goes ding, or the thermometer goes beep, you will have some pretty dang good potatoes!

Squashed & Crispy Roasted Potatoes

Serves: 4       Total Time: 50 Minutes


  • 20 to 24 baby potatoes
  • 1 tbsp. butter
  • 1 tbsp. bacon grease
  • 1 small garlic clove, grated
  • pinch of parsley
  • pinch of oregano
  • pinch of thyme
  • salt to taste
  • Oil 


Step 1
Preheat your grill to 375°F, prepare for indirect grilling. If you are grilling other things, you can just go with whatever temperature you're using then. Just pay attention to them if it's hotter, or leave them longer if it's cooler.
Step 2
Scrub your potatoes, then boil them for at least 15 minutes, or until they fall off a fork when you stick 'em.
Step 3
Remove the potatoes and drain them. Oil a baking sheet (or oil the foil on a baking sheet). Place the potatoes on the prepared baking tray. Using a solid cup, potato masher, or something like that (the Napoleon Branding Iron works well) squish the potatoes until they break open but aren't completely broken apart.
Step 4
Melt the butter and bacon fat together, then mix in the garlic and herbs. Pour the bacon butter all over the tops of the potatoes. Season to taste with salt.
Step 5
Bake over indirect heat for 25 minutes or until nice and crispy.
Step 6
Serve with your favorite meal, these are great with meat and veg, or even with some eggs over easy.

Squashed & Crispy Roasted Potatoes are so delicious. I think I have made them three times since actually photographing this recipe. The thing about the bacon fat though, you have to have some pretty clean rendered fat. You don't want to use the cheap grocery bacon from a watery package, you want to use the fat from some thick sliced bacon from the butcher, or that you made yourself. But seriously.
