Crispy Heirloom Potatoes

Crispy Heirloom Potatoes are crunchy on the outside and almost creamy, and definitely fluffy on the inside. If you're a lover of all things potato, then these are definitely worth a try. They went perfectly with my Rustic Slow Roast Beef, but will make an awesome side dish to just about any meal you make.

Crispy Heirloom Potatoes

Serves: 4       Total Time: 50 Minutes

Ingredients

  • 24 baby heirloom potatoes
    (the multi colored ones, or just regular ones)
  • 3 tbsp. goose fat, bacon fat, or butter
  • 1 tbsp. oil
  • 1 tbsp. chopped fresh chives
  • 1 tsp. thyme
  • 1 clove garlic, grated
  • 1 tbsp. parmesan cheese, finely grated
  • salt and pepper to taste

Directions

Step 1
Wash the potatoes, then slice them in half, or into quarters if they're larger than 2-inches.
Step 2
Toss the potatoes with 1 tbsp. oil, garlic, chives, thyme, parmesan, salt and pepper.
Step 3
Melt the fat or butter in the cast iron skillet, on the side burner over medium-high heat, heating until it sizzles.
Step 4
Fry the potatoes, flat side down, until they're crispy. Flip the potatoes over and move the skillet onto the grill to finish cooking with the main dish. OR place them on the grill, preheated to 375°F.
Step 5
Serve once the potatoes are soft when pierced.
Crispy Heirloom Potatoes are a great side, they will go with pretty much anything at all. They're easy, and once the initial heat is over, you just set and forget them, moving on to more important preparations. What is your favorite way to serve a potato? Leave a comment and let us know.
