This recipe started with me seeing some crazy 30 second video on Facebook. Easy Apple Blooms looked - just that - easy! But I couldn't just do what I saw online. No! I needed to take it up a notch. Make these things the most amazing pastry thingadooeys that you have ever put in your pie-hole! And I did. Cinnamon, lemon juice, and cream cheese icing take these from pretty apple pies to some sort of danish delight. Try these with your leftover pastry next time you bake.

Easy Apple Blooms

Serves: 8       Total Time: 50 Minutes


  • 2 medium sized apples
  • 3 tbsp. lemon juice
  • 2 tbsp. brown sugar
  • 2 tsp. cinnamon
  • 1 tsp. vanilla
  • 1 full sheet of puff pastry
  • coarse salt

Cream Cheese Icing

  • 1 brick, 8 oz. of cream cheese, room temperature
  • 1/4 cup butter, room temperature
  • 1.5 cups icing sugar
  • 2 tsp. vanilla



Step 1
Wash and slice the apples into thin slices, about 1/8-inch thick. Place the apples into a saucepan and toss with the lemon juice, vanilla, brown sugar, and cinnamon. Over medium low heat, gently cook the apples until they are soft. Let cool enough to touch.
Step 2
While the apples are cooling. Cut the cream cheese and butter into chunks. Using a stand or electric mixer, beat the cream cheese and butter together until smooth. Add the vanilla and sift in the icing sugar a little at a time, until completely incorporated.
Step 3
Preheat the grill to low, about 350°F. Prepare for indirect grilling.
Step 4
Roll the pastry out onto a floured surface. Slice the pastry into strips that are about 9 to 12-inches long by 1.5-inches tall. Lay the apples in an overlapped pattern across the top of a pastry strip. (Save the liquid from cooking the apples for later!) Drizzle or spread a line of cream cheese icing across the bottom of the overlapped apples before folding the bottom of the pastry over the bottom of the apple slices. This should cover half of the apple slices, leaving the other half sticking out the top of the pastry.
Step 5
Roll the apples in pastry up like you would for a cinnamon roll, then place the rolled bloom into the cup of a well greased muffin tin. Repeat for the remaining pastry and apples. Sprinkle the tops with coarse salt. Just a tiny bit. It looks pretty and adds another dimension of flavor.
Step 6
Bake the apple blooms over indirect heat for about 30 minutes, or until the pastry is golden brown.
Step 7
Serve the apple blooms as soon as they've cooled enough to eat. Top with leftover cream cheese icing. Toss the cooking liquid in the microwave for a few seconds, and drizzle it on top of the apple blooms too!

Easy Apple Blooms are very easy to make. They're impressive looking and taste divine if you love the apple cinnamon and icing combo, but who doesn't? The hint of smoke from the barbecue is a fantastic little addition to the whole ensemble, and I can tell you, we scarfed down two of these each, the husband and I, so they won't last long when served.
