With Cheesecake Ice Cream

Drizzle with chocolate
- 4 regular flour tortillas
- 1 pint of strawberries, washed and sliced
- 2 bananas, sliced (optional)
- 1/4 cup pecans (optional)
- 1 cup of chocolate chips, preferably semi sweet or dark
- 1/3 cup of milk or cream
- 2 tbsp. butter
Cheesecake Ice Cream
- 1 cup heavy cream (whipping cream)
- 3/4 cup + 2 tbsp. sweetened condensed milk
- 1/4 cup goat cheese
- 1 tbsp. vanilla extract, or 1 vanilla bean, pods scraped
- lemon zest to taste
Start by making the ice cream. Set a metal or glass bowl in the freezer to chill, this yields better whipped cream. Line a containment unit, like a loaf pan, with waxed paper.
Mix the condensed milk and goat cheese together, leaving tiny chunks of cheese. Once the bowl has sufficiently chilled out, pour in the cold whipping cream. Using a hand mixer, or a stand mixer (whatever floats your goat), whip the cream until stiff peaks form. That means that it holds its shape when you invariably stick a finger in to taste it. Add the vanilla when it's still mixing. Gently fold in the cheese-condensed milk mixture when the whipped cream is whipped. Pour the mixture into your prepared container and then pop all of that in the freezer to set for at least 2 hours.
When your ice cream is frozen, wash and slice the berries. If it's not strawberry season, you may want to add a little sugar or consider roasting the berries on the grill for added flavor.
Preheat your grill to 375°F or so. While the grill is preheating warm the 1/3 cup of milk or cream. You can use the microwave if you like. Once the dairy is starting to steam but not boil or scorch, remove it from heat and add the chocolate chips, stirring until it's all mixed together. If your chocolate doesn't drizzle off the spoon in a steady stream, add a little more liquid and heat again for about 10 seconds.
Butter one side of the tortilla, and place it on the grill over direct heat. Spread a couple of tablespoons of the chocolate sauce on the tortilla, then layer the sliced strawberries (and other toppings) over half of the tortilla. Fold the other half over and grill until everything is warmed through and there are some awesome grill marks.
Use a pizza wheel to slice your treat and serve it with the fresh ice cream and more chocolate drizzle.
