BBQ Bloomin’ Onions

BBQ Bloomin’ Onions

A Healthier Alternative

Posted on October 30, 2017

One of the most loved appetizers of all time is the deep fried Blooming Onion. Only thing is that there are a couple problems inherent in making them. They’re deep fried, so there are all of the calories, and they’re breaded, so some people will end up missing out on the deliciousness. Not so with these BBQ Bloomin’ Onions! Gluten-Free, and not deep fried, but barbecue baked to beautiful deliciousness, these BBQ Bloomin’ Onions are gloriously caramelized on the grill. If done correctly, the onion flavor deepens and becomes sweet. Serve with a delicious steak, or as an appetizer.

Margarita Ice Cream

Margarita Ice Cream

Adults Only Dessert

Posted on May 02, 2017

Try something fun and fresh to share with your friends and family for dessert. This Margarita Ice Cream is fantastic, not too sweet, and even gluten-free! This recipe tastes just like a Margarita! The lime flavor isn’t as crazy-sour as you think it would be, and the tequila doesn’t overpower. This recipe is easy to make and doesn’t require churning. Serve it off of the Napoleon Himalayan Salt Platter Set for a really authentic Margarita taste. It adds that counterpoint to the sweetness and creates the perfect Margarita flavor. Ad a little extra love to the limes by grilling them over direct heat on the Rogue® Gas Grill. For even more oomph, smoke the cream using indirect heat.

The Perfect Sous Vide Rump Roast

The Perfect Sous Vide Rump Roast

with Scotch Gravy

Posted on January 24, 2017
After visiting Scotland, I knew it was time to celebrate Robert Burns Day as only I could, by grilling up something delicious. This Sous Vide Rump Roast with Scotch Gravy paired perfectly with my Grilled Haggis and brought the whole meal together. Using my Joule, by ChefSteps I was able to cook a rump roast to the perfect temperature, then finished it on a hot grill for some pretty succulent beef. Rump Roast is usually reserved for slow cooking due to its tough nature. That’s why using the Joule to cook this meal was ideal. The gravy I made using the juices from the cooked beef, with the addition of a healthy splash of Scotch made for one very delicious Robert Burns Supper. Don’t forget the Neeps and Tatties.

Goat Cheese Risotto

Goat Cheese Risotto

With Roasted Red Peppers

Posted on December 08, 2016
I wanted to make a meatless meal that was rich and satisfying. I was at a loss, searching until I saw a title - Goat Cheese Risotto and my search was over. I just went from there, adding roasted red peppers, a couple kinds of cheese, peas, and fresh herbs until I had a filling dish that would be suitable for both a side dish and a full meal. In the end, this meal was so much better than I could have imagined.

Grill Roasted Tomato Sauce

Grill Roasted Tomato Sauce

With Roasted Veggies

Posted on April 21, 2016
Homemade spaghetti sauce is the ultimate comfort food in my home. Both my mother and father have mastered the marinara, and each have their own unique way of making it. Funnily enough mom is of Irish descent, and father is English/French Canadian - how this Italian food staple became a fixture on the dinner table I will never know. What I do know is that it’s my favorite comfort food. I love to make gigantic batches and freeze it for later. This Grill Roasted Tomato Sauce is a grill-tastic vegetarian version of my childhood favorite and a great way to sneak those veggies in to a meal.

Cucumber Salad

Cucumber Salad

with Balsamic Vinaigrette

Posted on April 14, 2016
My fantastic grandmother served this salad one evening with dinner. Cucumber Salad with Balsamic Vinaigrette is supremely light, and packs a flavor punch that you are not expecting. Adding the onion and carrots elevates this side from possibly pickles to positively divine. It is unexpected and fresh. It would make a great topping for a turkey or veggie burger, or perfect for pretty much any meal where you need a quick and light side.
