I have been meaning to make this BBQ Swineapple Recipe for some time. I just love the play on words that is the name. I mean, who doesn’t love saying Swineapple? Sweet, acidic, and porky. This BBQ Recipe has it all in spades. Served with some fried rice, you have a meal that was as filling as it is tasty. 


Now I ended up doing this recipe twice. I had the brilliant idea that you could use the rotisserie to cook this, getting a beautiful and crispy bacon crust on every side! It didn’t go so well. Due to the acid content from the pineapple, the bacon disintegrated, even though I used a thicker cut. Remember that your bacon will break down faster if you use regular bacon. In the end, I ended up roasting the BBQ Swineapple on a rack over a drip pan. It was still delicious, however, the bottom wasn’t glazed and crispy, as I had hoped.

Cooking for a crowd isn’t easy. When I decided to celebrate Mother’s Day with my husband’s family, I decided we needed to kick off barbecue season too. These Easy Side Ribs With Simple BBQ Sauce will tickle your mom's ribs! They were easy enough to get that smoky deliciousness, and fast enough that we were serving dinner by 4 pm. The simple sauce was sticky sweet and ideal for pork ribs.

This is another recipe that happened due to a video shoot. We needed ribs for an accessory video and we had a lot of other things that needed doing that day so these ribs had to be done, and done fast. I am one who is loathe to waste food when it's unnecessary, so I had to make them not only look good but taste good too. Pulled pork doesn't have to be overly complicated. Use your favorite seasoning and smoke low and slow until the shoulder blade slips out of the meat without force. I was at the Tragically Hip concert in Bobcaygeon on Saturday. What a great show! The weather was not the greatest, but the food! OH the FOOD!  So much to choose from, and all of it great! One of the best things there was the back bacon on a bun. Usually I would slap an egg and some cheese with back bacon, or at least some hollandaise sauce, but this was some sort of barbecue sauced grilled heaven. I was bound and determined to find a recipe for it when I got home, and slept for most of the next day.
