Sometimes you just bump into a recipe without realizing it. I was doing a smoke which takes most of a day, so I always make sure to get as much out of my Apollo as I can when using it. I was mainly smoking up ribs for a family dinner but I had a few other bits and bobs I wanted to smoke as well. While gathering the ingredients for this flavor adventure, I stumbled upon turkey thighs. I had seen breasts in the market before, legs too, but never just the thigh. So I went for them, remembering the giant smoked turkey legs at Disney World with fondness. I wanted to recapture the feeling, and that is how Smoked Turkey Thighs with Club House La Grille Smokehouse Maple Rub came to be.

You all know how much I love garlic. I love it as much as I love chocolate and cheesecake. When I got the chance to try a wet rub chock full of garlic, I just leapt at the chance. Grill Roasted Extra Thick Pork Chops With La Grille Roasted Garlic & Peppers Rub is succulent, savory, and oh so tasty! The rub melted into the meat creating this penetrating flavor full of garlic. Yum! I used a roasting technique, instead of a fast sear and then indirect heat to finish it off. That is because I didn’t want to burn anything with unpredictable caramelization of the rub. Our patience paid off though, because after resting, this meal was unbelievable.

I've mostly successfully done a smoked brisket and it was amazing. But I wanted to do a brisket that would make a Texan proud (or at least I hope they'd be proud). So instead of smoking, this time I opted to make a Foil Roasted Brisket in honor of National Brisket Day on May 28th.

After the most amazing success of the Honey Buttered Chicken Thighs (Exclusive Recipe Club recipe), I wanted to recapture the feeling and deliciousness in a meal for myself at home too. So, I threw a bunch of yummy sounding ingredients in a dish and marinated the chicken. What we ended up with was a sweet and tangy chicken dinner, chock full of veggies and chicken that had this lovely, partially caramelized, exterior.
