Oh my goodness. (And I mean GOOD-ness!) My Instagram feed has been filled with these images of pancakes that were inches thick, stacked high and topped beautifully with fruit. Inspired by these beautiful images, I just had to try making Japanese Hotcakes myself! They’re sweeter than your typical, flat pancakes, they also look way cooler. The toughest part of making these is keeping the heat just right to allow them to cook all the way through. However, when you’re done and have a stack of these adorable hotcakes a mile high on your plate, you will be in hotcake-heaven.

To celebrate National Apple Turnover Day I made Maple Rum Apple Turnovers. Really, who doesn’t need a day dedicated to these flakey, sweet, could-eat-them-for-breakfast, little hand pies? I can’t decide if it was laziness or my easily distracted nature that lead to this recipe. I was just cooking away when I noticed that I had left a bottle of Kraken out. It was “Oh, hey, rum! Let’s add that”. The rest, as you know, is delicious history. Really. They’re gone. All of them. Yum.

That’s not what caught my attention that evening. No. It was the big slab of pork belly that was calling my name. Sure, I could do what we always do and smoke up some amazing bacon, but not this time. This time we made Grilled Pork Belly with Maple & Chinese Five Spice and it was like magic on a plate!

This is another recipe that happened due to a video shoot. We needed ribs for an accessory video and we had a lot of other things that needed doing that day so these ribs had to be done, and done fast. I am one who is loathe to waste food when it's unnecessary, so I had to make them not only look good but taste good too. I really enjoyed the way the green beans turned out in my recipe for Maple Glazed Duck Breasts. Adding bacon seemed like a logical next step. And even better, I had the Peppercorn and Maple Bacon that I recently made. Green Beans With Bacon, Butter & Maple turned out to be a fantastic side to go with Thanksgiving Dinner. Even better, this recipe is also gluten free, making it a great side dish if you have guests with dietary needs.

I made these Sausage Stuffed Baked Apples after seeing a photo online. That's how it happens sometimes. I just had this image in my head and was all about making these! I started with the most gigantic apples I have ever seen. These Honey Crisp Apples - yes the ones from the Maple Walnut Apple Crisp recipe - were perfect for this. They were ginormous! Massive. Did I mention they were big?  Then I grabbed some sausage. It couldn't be just any sausage though, it had to be the right amounts of sweet and savory, something that would pair prettily with the apple and other sweet flavors. In the end I had these gigantic apple bombs that were aromatic and delectable. A perfect balance. Oh and they're gluten free too.
