If you want to impress people, Duck Pizza with Caramelized Onions, Candied Bacon & Balsamic Reduction is a surefire way to do it. Loads of big flavors come together to form a succulent whole that seems as though it leapt off the pages of a gourmet magazine. To be honest, when I was asked to cook for some VIP’s recently, I was racking my brains, trying to think of something unique to make. Thanks to a colleague and fellow foodie, we came up with a fantastic combination of ingredients that turned into this amazing Duck Pizza.

The rotisserie is possibly one of the best grilling accessories you can have. Cooking a Slow Roasted Leg of Lamb on the Rotisserie makes for one succulent meal indeed. Savory spices, roasted garlic oil, and a little patience went a long way to making this family dinner an enjoyable one.

PRO TIP: Remove the grids and sear plates, place Napoleon's Cast Iron Charcoal and Smoker Tray on the burners and use some lump charcoal and wood chips to give your lamb that delicious charcoal flavor.

Imagine having the most delicious baked potato, but instead of in the skin, it's in a dish, just mashed potatoes. I don't think I am describing this well. These Fully Loaded Baked Mashed Potatoes are amazing. Loaded with all of the flavor of a baked potato, but in a gravy holding, mouth watering, soft and delicious package. I baked these potatoes with the turkey over charcoal, then mashed them with all of the delightful fillings you would put on a baked potato.

We love potatoes in the Sizzle household. I mean you can boil ‘em, mash 'em, stick 'em in a stew, but when you really want a treat, I mean REALLY REALLY, these Squashed & Crispy Roasted Potatoes are AH-may-Zing! They're flavorful, fluffy AND crispy too! You can have these awesome potatoes too! Just follow along with the recipe below and you will have something super delicious in no time. Basically you should start them before you start anything else, throw them on the grill and when the timer goes ding, or the thermometer goes beep, you will have some pretty dang good potatoes!

If you have never made one, this Easy Goat Cheese Soufflé is the perfect recipe for you to start with. Having never made a soufflé before, I was scared. The only reference and experience that I have ever had was the sitcoms where the woman pulls this beautiful soufflé from her oven and there's a loud noise causing it to collapse to the sound of a laugh track. So imagine my panic as the cat runs up and down the halls bouncing off the walls. I thought the same thing would happen to me. But, no. Everything was perfect and in no time we were eating something that resembled a mousse and perfect scrambled eggs but tasted like the most incredible mac and cheese you have ever eaten. Served with a Grilled Pear Salad, it was the height of decadence.

This Irish Beef Stew is beautiful, amazing, filling and healthy. We had to do something about that, so I added Guinness, and vengeance! Last year I had Irish Beef Stew on the menu for St. Patrick's day, but it failed so badly. The pot that I was using boiled dry and burned! My biggest pot was very nearly ruined. This year I was determined to get it right. I did that and more. Knocked it out of the park and right into next week! You gotta make this stew! But remember that the secret to it is to use a wooden spoon! YOU HAVE TO USE A WOODEN SPOON! Your stew will taste better. Trust me.

I needed a whitefish for a lunch recipe at work. Yep. I grill, at work, on the job, feeding the people in the office. That is what I do, when I'm not typing. I have the best job. 

Okay I digress. Needed fish. Needed something different. So, pacing in front of the seafood counter in the local supermarket, I asked for a reasonably priced fish that I could get a lot of right then and there. The kind person who helped me suggested the Rockfish. Yep. Still new to the seafood world I goggled at her. What's a rockfish? It doesn't sound that great. Maybe a little hard. (ba dum) You may know it as Black Snapper. And this is how you grill it up quickly for a fantastic meal.
