Soy and Honey Marinated Duck

Soy and Honey Marinated Duck

with Broccoli Fried Rice

Posted on July 20, 2016
Duck is savory and definitely different. It pairs beautifully with aromatics like thyme and sage. Duck can just as easily go with a delightful and sweet maple-butter. However, in search of something a little different, I decided to make Soy and Honey Marinated Duck with Broccoli Fried Rice. These duck breasts are marinated in soy, honey, sesame oil, and sake, then grilled to a perfect medium rare and served atop a bed of fresh fried rice, chock full of veggies. This delicious dish will be a fan favorite as soon as you serve it.

Chicken Teriyaki Fried Rice

Chicken Teriyaki Fried Rice

Mmmm tasty

I had pulled chicken thighs with the intention of making Spicy Rice with Chicken instead of Haddock. The husband wasn't feeling it at all that night, so I cast about the kitchen looking for something else to make. Chicken Teriyaki Fried Rice sort of leapt out of the pantry at me. The ingredients list was relatively similar, with some slight modification, but it was generally where I was going for dinner. It turned out pretty dang delicious too.

Glazed Duck

Glazed Duck

With Spicy Fried Rice

A few weeks back I made Glazed Duck With Spicy Fried Rice for dinner. There's something about this Asian-inspired meal that marries the delicious spice of the rice with a sweet glaze on the duck for a meal that covers all of the bases. The rice is full of veggies so you don’t necessarily need to make more.  Although the more veg the merrier!  This is a very filling meal – one duck breast will feed you well.

Grilled Haddock

Grilled Haddock

With Spicy Rice

Posted on October 21, 2015
One evening the husband and I were driving through a shopping center, and we saw that there was a Nando's going in. He waxed poetic about their rice and how amazing it was. I knew that I needed to find a way to make it for him. If you're not familiar, Piri-Piri is the name of the game with Nando's dishes. So I set about gathering the spices that would bring that kind of flavor. That is how the recipe for Grilled Haddock With Spicy Rice was born.

This turned out a little warmer than I had intended, but the scent was just amazing. A huge plate of veggie laden rice, topped with a perfectly grilled haddock fillet that is smothered in garlic, butter and more piri-piri spice. The husband and I were in flavor heaven. Try this and you will be too.
