Oh my goodness. (And I mean GOOD-ness!) My Instagram feed has been filled with these images of pancakes that were inches thick, stacked high and topped beautifully with fruit. Inspired by these beautiful images, I just had to try making Japanese Hotcakes myself! They’re sweeter than your typical, flat pancakes, they also look way cooler. The toughest part of making these is keeping the heat just right to allow them to cook all the way through. However, when you’re done and have a stack of these adorable hotcakes a mile high on your plate, you will be in hotcake-heaven.

Irish Potato Farl is a quick, flat bread made with leftover mashed potatoes. Sometimes just fried up and eaten with butter as a snack, it is also served with a full Irish breakfast called an Ulster Fry, along with baked beans, tomatoes, sausage, bacon, black and white pudding.

Funnily enough, I never tried to make this because I was afraid I would mess it up. I had an Irish great-grandmother who would make it by hand for the family, then my wonderful grandmother started making it too, but it always seemed to be magical and secret. Until I finally learned that my grandmother, at least, was using the food processor. So I decided that this St. Patrick’s Day I should grill some up.

Captain Crunch Chicken Fingers, there's a story behind this one. I have been a very lucky person. When I was younger, my father took me to Europe. We stayed in Paris for a couple of days before going to Euro Disney and then London via the Chunnel. While in Paris, we ate at a Planet Hollywood. I was horrified to see the chicken fingers, my go to meal was breaded with Captain Crunch, my all time favorite cereal. Back then I was picky. I have learned much since then. Ever since then, I have had that thought pop into my head periodically. Could I? Should I? Well I finally did it. I finally had enough bravery to give it a try. This recipe, these Chicken Fingers... Are. Just. Amazing.

Chicken 'N' Biscuits With Gravy, another recipe perfect for Soul Food Month. Juicy chicken with flakey buttermilk biscuits, served with some greens and topped with creamy milk gravy, who could ask for anything more? Oh wait! I could! How about we throw this all on the grill? I did and it was glorious.

There's nothing like warm, fresh White Chocolate Macadamia Nut Cookies straight from the grill. And imagine how happy Santa will be, getting homemade cookies of this caliber with a tall and cold glass of milk. These cookies also happen to be the Baron of Baking's absolute favorite cookie ever too.

I made Potato Latke using the new Napoleon Slider Kit to make the perfect sized and shaped potato pancake. They're tasty and crispy, perfect for pairing with just about anything you could imagine. We enjoyed ours with Dry Aged Wet Rubbed Steaks, but they'd be equally as good with brisket, eggs, salads, well just about anything that potatoes go with! You can serve them with a dollop of sour cream, or apple sauce on top too.
