The best laid plans can fall through leaving you with a gigantic “what do I do now???”. That’s what happened when I planned to make something entirely different for this week’s recipe. Thankfully as I stood forlornly in the produce section unable to find the ingredient I needed, I spied some pineapples that just needed a good grilling. And what goes best with a sweet fruit like pineapple? Why pork of course! That’s where Fireball Pineapple Grilled Pork came in. After searing the meat, I placed the pineapple overtop using the rotisserie. As I glazed the pineapple, the heat and baste will drip down and flavor the delicious pork. Now that I had some ingredients and a plan, it was time to do some barbecuing.

Rotisserie Rack of Elk is an easy and incredibly flavorful recipe, perfect for holiday eats or a nice weekend dinner. Elk has a deep flavor, a combination of lamb’s earthiness and beef’s … beefiness. Using the rotisserie to slow roast this cut will result in meat that is beyond tender. (I am pretty sure we could have cut these up with a spoon.) Simple seasonings allowed the elk’s pure flavor to be showcased and enhanced by the smokiness from grilling.

April 26th is National Prime Rib Day. What an excellent excuse to indulge and make yourself some Rotisserie Prime Rib With Basil Garlic Baste. Prime Rib is not the least expensive in the world, so having a holiday where you can indulge without feeling bad about it is flipping fantastic. I paired this aromatic crusted, melt in your mouth, beefiness with my favorite potato dish, Potato Galette
