Oh, look - Another cheesecake recipe! YAY!! This time I made White Chocolate Cheesecake With Fresh Raspberries, in honor of National White Chocolate Cheesecake Day. (Not that I needed an excuse to make cheesecake at all, but having one is always helpful.) This recipe is chock full of deliciously creamy white chocolate, the tart raspberries adding a bright freshness to the whole thing. I had about a third of a block of cream cheese, not enough greek yogurt for a meal and a spoonful of sour cream. I also had a craving for dessert. Instead of spreading that cheese on a bagel, I made it into Individual Cheesecakes In A Mug. Okay not a mug because it wouldn’t survive the grill, but a heat safe ramekin of similar size was perfect. If you have a little bit of ingredients but a big sweet tooth, then this recipe is perfect for a little after dinner treat.

Thanksgiving and autumn are a time for cozy foods and pumpkin flavored everything. I will admit that I have never liked even the thought of something pumpkin flavored, however I thought that it was about time that I finally acquiesced and made something pumpkin. Pumpkin Pie Cheesecake With Sugar Cookie Crust was actually very good. I will admit to being skeptical, but it turned out that the taste reminded me of gingerbread for some reason. Anyway. Thanksgiving needs Pumpkin Pie, so here you go. Sort of.

I don't need a reason to have cheesecake. I could have cheesecake every day, no matter what. That's probably why there are more than ten recipes for cheesecake, or cheesecake related desserts on this blog. Red Velvet Cheesecake With Cream Cheese Icing seemed like the next logical step in cheesecake recipe making. I had two reasons to make this. One, it's National Cheesecake Day, and you HAVE to have cheesecake on National Cheesecake Day, and two, I wanted to make something special for a friend who really helped us out. In both I believe that I've succeeded because dang! This cheesecake was amazing.

Part of celebrating Cinco De Mayo is having a fantastic dessert to go with your amazing meal. I was going to do some sort of "Mexican" food like a quesadila or chimichanga filled with fruit and chocolate, but I had all these limes and tequila, and let's face it, you know my opinion on cheesecake. So I made Margarita Curd Cheesecake instead. First of all I was quite inspired by a dessert I taste tested at Costco a few weeks back and fully intended on recreating - a lemon curd, crumble topped cheesecake pie, and with Cinco De Mayo around the corner too, I had all the stuff to make a rockin' lime curd. Well I added tequila and things got a little out of hand, and into my mouth. You have to make this delicious, creamy dessert.

You can't have a happy St. Patrick's Day without some Guinness and dessert. Why not combine the two by making some Guinness Cheesecake With A Pretzel Crust. Sweet and salty, full of beer, this dessert has it all! And considering five people demolished a cake meant for eight, yep it is gooood. Celebrate St. Patrick's Day, not with green beer, but with a dessert that covers all the best flavour bases, and maybe even some of the food groups too.
