Crispy Heirloom Potatoes are crunchy on the outside and almost creamy, and definitely fluffy on the inside. If you're a lover of all things potato, then these are definitely worth a try. They went perfectly with my Rustic Slow Roast Beef, but will make an awesome side dish to just about any meal you make.

June is National Soul Food Month, so I did some research into what foods were considered to be Soul Food. Blackened Catfish was very close to the top of the list, and I definitely thought "I could grill that". And grill I did! Buttery and flavorful, you would be surprised, blackened is not burned, or at least not burnt tasting. And we paired it with rice and lemon for a very awesome meal. Catfish, for those like me, who don't really do the seafood thing, is definitely a fishy flavored fish but it's not overpowering. I quite liked it. Not only that, but this recipe turned out to be super fast and pretty darn easy to make too!
