Oh my goodness. (And I mean GOOD-ness!) My Instagram feed has been filled with these images of pancakes that were inches thick, stacked high and topped beautifully with fruit. Inspired by these beautiful images, I just had to try making Japanese Hotcakes myself! They’re sweeter than your typical, flat pancakes, they also look way cooler. The toughest part of making these is keeping the heat just right to allow them to cook all the way through. However, when you’re done and have a stack of these adorable hotcakes a mile high on your plate, you will be in hotcake-heaven.

The best thing about being an adult is that you can eat whatever you want for dinner. The other night, neither of us felt like eating a meal, meat and potatoes, pasta, nothing at all sounded good. I don’t know if you’ve noticed, but I spend a lot of time on the Internet. Recently, I saw a photo of a delicious looking pizza with cooked eggs on top. It was some sort of dinner pizza, but I immediately thought that pizza would make a perfect breakfast food, especially made fresh and topped with eggs. Thus Breakfast Pizza and its resulting deliciousness came into being. Next time though, I am adding Hollandaise sauce!

Bacon is a treat for some. For others, myself and the husband included, it's weekend required eating. When asked what she would like to eat after a successfull Girl's Night In, my firend really wasn't up for eggs. What can I say, it was a big Bison Steak dinner! But, the thought of bacon was too much to turn down so instead I decided on BLT's for breakfast. So here I am prepping the ingredients, mulling over the acronym "BLT", I suddenly thought G.L.T!! Lightbulb! Grilled Bacon Lettuce And Tomato Sandwiches! YES! They were exquisite, by the way.

Apple Crumble Quinoatmeal is sweet and packed with protein. It tastes like apple crumble and is a healthy way to get a hot breakfast into your body. Quinoa is one of those foods that has come into the lime light recently. It’s a fantastic grain that packs a protein punch. You can use it for just about anything, like instead of rice, or oatmeal. You want it savory, you want it sweet, it can do both and anything in between.

Basically, I got really bored with the breakfast that I was eating every day. I know, how could I get bored with my homemade granola and fruit and coconut yogurt? So I needed something different. Something that would give me that sweet kick and a punch of protein. Then Apple Crumble Quinoatmeal happened.
