There's a bit of a story with these Fried Catfish Tacos With Spicy Sour Cream And Avocado Coleslaw. When I was a lot younger, back in my picky eater days, I was watching a show whose main characters were focused on a Mexican family and fish tacos. They were obsessed with fish tacos. I couldn't dream of ever contaminating my tortillas with fish! Fast forward many years, and I have to try making these tacos. What happened? I still remember the revulsion of my younger self. However, I am now older an adult and have more adventurous tastes. Right? Honestly, these were delicious. The fish was crispy on the outside, well seasoned inside. The coleslaw with cheese on top, ohhh and the cream sauce bringing it all together... It was fishy heaven wrapped in a tortilla. Or something. Eat it yourself. You will understand.

I've been trying to find ways to sneak avocados into more food. They're super good for you, but there is just something about the green mushy thing that I can't figure out. They're also like bananas, unripe forever, then you have a day or so of perfection, then suddenly they're gross! Just got to get into the avocado groove I guess. Anyway, I had such success with the awesome, creamy, and delightful Thai Chilli Guacamole, that when my co-worker and fellow foodie was telling about this incredible guac he made, I just had to try it. Since then I have made Fully Loaded Guacamole about 4 more times.

Chicken Flautas With Avocado Cream are a Mexican dish that came out of nowhere. I hadn't heard of them until a coworker asked me if I had had one before. Nope, but they sound absolutely delicious! I must make some! So I did. Basically it's a fried chicken stuffed soft taco-burrito-thingy. They're sometimes called/confused with toquitos, which are very similar, but Flautas are larger and longer. So here is my take on the Chicken Flauta. (By the way they're really delicious.)

Cinco De Mayo is just around the corner. If you plan on celebrating, you have to serve food. These Grilled Chicken Enchiladas With Homemade Enchilada Sauce And Refried Beans are spectacular. They don't look like much, but flavor wise? Muy Bueno! So many different layers of texture and taste wrapped into one tortilla! It's like Cinco De Mayo on your tongue. Wait! It IS Cinco De Mayo! 

Now I opted to make everything (except the tortillas) fresh, but you certainly don't have to. And you can definitely taste the quality and difference. I also suggest that you double the recipe for the beans, they're pretty good, and like that Thai Chili Guacamole, which I highly recommend you make and have on hand for this meal, you will want to put that stuff in/on everything.

When you get a craving, there's not much you can do but cater to it, well when it comes to food anyway. I had been craving some tacos for a while so this was just an amazing treat. While braising I tested the meat a couple of times and was surprised at how spicy it was. I was worried that the Carne Asada was going to be too spicy, but it turned out perfectly.

Now I know that some of you like to keep things hot. If you are after that, I would really recommend making this Ghost Pepper Salsa to go with your Carne Asada. Though I am curious! Mild, Medium, or HOT HOT HOT? Leave a comment below and tell us how you like it!

What a super tasty take on a Mexican classic. I love my meat, and after making that Pulled Pork for the first time, I think that it's one of my favourites. That and the Maple Bacon Ribs. But I would love some other ideas on what to do with it! What do you do with the Pulled Pork that you make?
