I remember my own mother making it years ago too.  As it happens to be National Lasagna Day, I decided to pay homage to our fond childhood memories, and made my own Homemade Lasagna With Meat and Three Cheeses. I started with my Mother-in-Law's recipe, then I put a bit of a grilled spin on it, but I think you’ll like the results as much as we did.

No Churn Coffee Ice Cream with Chocolate Coffee Ganache is the kind of caffeinated sweet treat that will perk you up on a hot day in more ways than one. I was making homemade ice cream for a friend one day. While sipping my coffee and whipping the cream for the recipe it hit me. I should make coffee ice cream too! I had all of the ingredients to do it, so why not? I brewed up a fresh cup, using it to help melt the chocolate for the ganache. I added chocolate covered coffee beans to the recipe too. This has to be my favorite homemade ice cream so far. It may very well be yours too.

Homemade spaghetti sauce is the ultimate comfort food in my home. Both my mother and father have mastered the marinara, and each have their own unique way of making it. Funnily enough mom is of Irish descent, and father is English/French Canadian - how this Italian food staple became a fixture on the dinner table I will never know. What I do know is that it’s my favorite comfort food. I love to make gigantic batches and freeze it for later. This Grill Roasted Tomato Sauce is a grill-tastic vegetarian version of my childhood favorite and a great way to sneak those veggies in to a meal.

My fantastic grandmother served this salad one evening with dinner. Cucumber Salad with Balsamic Vinaigrette is supremely light, and packs a flavor punch that you are not expecting. Adding the onion and carrots elevates this side from possibly pickles to positively divine. It is unexpected and fresh. It would make a great topping for a turkey or veggie burger, or perfect for pretty much any meal where you need a quick and light side.

After making Homemade Vanilla Bourbon Pecan Butter to celebrate National Pecan Day on April 14th, I had loads left over! 2 cups worth! Sure, it’s delicious on pretty much everything, but I wanted to do something super special. My friend tried a spoonful of the fresh nut butter and said “You know what would be awesome? This… in peanut butter cups!”. He was right. I made Pecan Butter Cups the very next day. They are pure chocolate and pecan awesomeness.

With only four ingredients, this recipe is supremely simple to make. I made everything up as I went along and I wouldn’t change a thing. I will be making these again very soon. Perfect to keep on hand for a snack, or dessert. I suppose you could share them with others if you’re truly generous.

I love pecans, so when I heard that they have their very own day - April 14th by the way; I just had to make some extra recipes to celebrate. I generally have peanut butter in the house for making Peanut Butter Banana Bread and Peanut Butter BBQ Sauce, but it got me thinking...What if you made peanut butter out of pecans instead of peanuts?? After some research, and a little innovation, I grilled up some pecans and turned them into Vanilla Bourbon Pecan Butter. The deep nutty tone is slightly sweet, and super perfect for just about everything you would want a nut butter for! Do you want to know the best part? It takes NO time at all to make!

This year instead of a traditional Christmas Dinner, we're going to have Christmas Brunch with the family. We plan on putting on a big spread with Mini Quiche, Fresh Biscuits, fruit and cheese trays, Bacon, Cranberry, Chocolate Chip Oatmeal Cookies, and of course these Homemade Sausage Rolls. We are definitely thinking outside the hotdog bun this year. These Sausage Rolls are made from freshly ground pork meat that we seasoned ourselves and you will love the results if you do the same.
