Crispy Potato Galette is like crunchy potato heaven. A delicious pie of crispy potatoes. It's like nothing I have ever had. And I think this may be the only way I prepare potatoes forevermore. Can you tell I enjoyed it? Are you sure? Yes, I thought that it was strange that this recipe is named like a razor, but the only thing this recipe is cutting is your preconceptions of what a potato side dish could be. I took it a little easy on the flavors, opting for salt and pepper and a little fresh rosemary basically, and what we got in return was pure awesome. Go ahead, try this for yourself! Right now! I mean it! I say that a lot don't I? What can I say? I love food.

I have now taught my first grilling class. I needed to prepare a program that covered as many different ways to grill in one lesson. One thing though, it had to be vegetarian. That's where Wilted Kale Salad With Grilled Vegetables And Homemade Dressing came in. Actually a bunch of things crossed my mind, but the main thing was that I wanted to come up with four different meals that incorporated the same or similar ingredients. After class I asked which was their favorite. This Wilted Kale Salad With Grilled Vegetables And Homemade Dressing was number one on the list.

Having recently discovered the joys of Panera (a sandwich restaurant chain) I've been slightly inspired to make delicious grilled sandwiches. Thing is, the weather needs to be a little bit warmer. Just a little. For my vegetarian grilling class, I decided that Grilled Vegetable Wraps in the style of a panini were in order. Like the Grilled Vegetable Quesadillas, these wraps are stuffed to overflowing with delicious vegetables, different cheeses and super awesome Thai Chili Guacamole

I had some beef, but not wanting to fall into a rut, a delicious skillet steak rut mind you, but a rut nonetheless, I decided to make some Marinated Beef Skewers With Spicy Peanut Dunk. Okay well it didn't quite start that way. I definitely knew I was going to marinate the beef, but when I boiled the marinade to create a sauce, it didn't work out. So I got creative with the stuff in the pantry. I found roasted peanuts, and threw some garlic and basil in with that. Added a little curry powder, and gave it a good waz in the food processor. What I ended up with was a crazy good, garlicky dip for the beef, that spread nicely on the naan bread and made the whole meal.

Served on a bed of wild, whole grain rice, with your favorite vegetables, this simple meal is easily thrown together. I was in a pinch, tired and grumpy, I needed something tasty for dinner, not boring old chicken...again. I sifted through the pantry and grabbed a few things that sounded good. Found some skewers hiding in there too and thought "why not?". And this is what happened next.

Thai Chili Guacamole And Creamy Garlic Queso are essential to a good plate of nachos. Let me tell you, sure my first Guacamole recipe was pretty darn good, but this one? This one is THE one. You won't just have people devouring it, you will have them battling with nacho chips being used as swords. And the Queso? I thought the Buffalo Chicken Queso was good, but this... well let's just say that a dish for 6 was being licked clean by 3 and a half people within 45 minutes.

Making homemade pitas is awesome, they're tasty and go great with Greek Marinated Chicken. I loaded mine up with some homemade tatziki sauce, salsa and loads of grilled veggies like peppers and onions. This was one happy, and fresh meal!
