Imagine having the most delicious baked potato, but instead of in the skin, it's in a dish, just mashed potatoes. I don't think I am describing this well. These Fully Loaded Baked Mashed Potatoes are amazing. Loaded with all of the flavor of a baked potato, but in a gravy holding, mouth watering, soft and delicious package. I baked these potatoes with the turkey over charcoal, then mashed them with all of the delightful fillings you would put on a baked potato.

One evening the husband and I were driving through a shopping center, and we saw that there was a Nando's going in. He waxed poetic about their rice and how amazing it was. I knew that I needed to find a way to make it for him. If you're not familiar, Piri-Piri is the name of the game with Nando's dishes. So I set about gathering the spices that would bring that kind of flavor. That is how the recipe for Grilled Haddock With Spicy Rice was born. 

This turned out a little warmer than I had intended, but the scent was just amazing. A huge plate of veggie laden rice, topped with a perfectly grilled haddock fillet that is smothered in garlic, butter and more piri-piri spice. The husband and I were in flavor heaven. Try this and you will be too.

Beef Was Never So Good

I've been wanting to try making Grilled Beef Wellingtons for a very long time. Like since I started this blog. But time, bravery, money, there were a lot of factors that prevented me from just doing it. This Thanksgiving, however, I wanted to do something  different, special, spectacular. This is my first time hosting Thanksgiving for the family, they deserve it after helping my husband and I into the new house. So, emboldened by my incredible kitchen, and with uber support from everyone, I did it. 

Wellingtons are expensive. Beef is getting more and more pricy, and tenderloin is through the roof. But if you're going to do this, you want to spend the money on quality. It is worth it. This meal shut the mouths of 8 people. They were so in awe of the flavors, I can't believe how speechless they were. Among these guests was my younger sister. If she is telling you about something, there is no stopping her! This did. 

You want to impress? Make this. It's not nearly as scary as you would think. I did not make up the recipe, but instead gained inspiration from Chef Gordon Ramsay's infamous recipe. You know the one. I took a few liberties when it came to the preparation, but followed his guidelines. He's actually a great teacher.

You can't finish your perfect Thanksgiving meal without dessert, and what better way to usher in autumn than with Spiced Carrot Cake With Cream Cheese Icing! Imagine a dense cake, scenting the air with the fragrance of fall, ginger, cinnamon, nutmeg. It's moist but not crumbly. It's perfectly topped with thick layers of sweet cream cheese icing. This is a cake to remember and could you believe that I made it on the grill?

 

Baking time varies widely from cake pan to cake pan, so I recommend checking at the 20 to 25 minute mark, and every 5 to 7 minutes afterwards. My cake pan was 6x6x3-inches and it took nearly 45 minutes for the cake to be completely done.

Peaces are spectacular, sweet and juicy. But they' not just for desserts. These Peachy Porkebabs prove that. I bought a basket of peaches at the farmers market and knew that I couldn't eat them all, no matter how hard I tried. So I decided that they needed to be cooked in to things. But not just desserts, however sweet my sweet tooth is, I don't think that baking a bunch of peach pies and cakes, and other sweet treats was going to cut it, especially on a grilling blog. I needed to go savory, but how? Pork, is good with apples. Apples are round and sweet, they're a fruit, so are peaches. YES! That's it. I will make a peach barbecue sauce to go with my pork.

It's peach season. It's CNE* season too. Summer is winding down, not that this prevents me from grilling in any way, and in homage to both peach season and the CNE, I have made a portable and peachy dessert that you will love. These Peaches And Cream Cupcakes With Peach Drizzle, were light, and sweet, and definitely easy to make. 

*CNE is the Canadian National Exhibition, Canada's largest fair, with the best and most wackiest street food, rides and vendors from everywhere. It's a big deal.

The success of the Chicken Shawarma recipe made me realize how delicious Shawarma can be. I wanted to make it again, but I also wanted to make a meal that was just a little different too. Lebanese Beef Shawarma With Tahini Sauce fit the bill exactly, using some traditional spice combinations you can take beef to a whole new level. The only thing we didn't have was the fries to go in the pita. But man was this  ever some good food. 

Actually, having just moved into our new home, my husband and I have had some issues with appliances and unfinished stuff (new build), so having nowhere to put our dishes for the most part left us in kind of a pickle. A pickle that is solved by making food that is portable. I know, all my pretty dishes seem to be making it onto the site okay, and I guess I could use paper plates and what not, but there's no fun in that! I want to make the food work for me! So we did.

Bacon is a treat for some. For others, myself and the husband included, it's weekend required eating. When asked what she would like to eat after a successfull Girl's Night In, my firend really wasn't up for eggs. What can I say, it was a big Bison Steak dinner! But, the thought of bacon was too much to turn down so instead I decided on BLT's for breakfast. So here I am prepping the ingredients, mulling over the acronym "BLT", I suddenly thought G.L.T!! An elegant meal that is perfect for your next special occasion, Bacon Wrapped Filet Mignon With Sweet Potato Fries was tender and delicious. This is the recipe for my first ever video recipe. Asian Beef Tenderloin With Tempura Onions And Gyoza Sauce, it's elegant, yet easy. And boy does it taste good too. The beef nearly melts in your mouth, and the tartness from the sauce makes it sing. The Tempura Onions are a nice crunchy offset to the tender beef. All in all a very successful meal. You need to try it yourself. Video equipment and crew not required.
