Captain Crunch Chicken Fingers, there's a story behind this one. I have been a very lucky person. When I was younger, my father took me to Europe. We stayed in Paris for a couple of days before going to Euro Disney and then London via the Chunnel. While in Paris, we ate at a Planet Hollywood. I was horrified to see the chicken fingers, my go to meal was breaded with Captain Crunch, my all time favorite cereal. Back then I was picky. I have learned much since then. Ever since then, I have had that thought pop into my head periodically. Could I? Should I? Well I finally did it. I finally had enough bravery to give it a try. This recipe, these Chicken Fingers... Are. Just. Amazing.

My husband ate a lot of fish growing up. I did not. At all. So, it's been slow going getting into the seafood thing, but we are getting there. As you can see, Salmon is my favorite and this Grill Roasted Salmon With Fresh Herbs & Feta was absolutely amazing. Fragrant fresh herbs and creamy zippy feta top a meaty salmon fillet. When served with some Crispy Roast Potatoes (just add some fresh dill and a squeeze of lemon) it's perfect.

A few weeks back I made Glazed Duck With Spicy Fried Rice for dinner. There's something about this Asian-inspired meal that marries the delicious spice of the rice with a sweet glaze on the duck for a meal that covers all of the bases. The rice is full of veggies so you don’t necessarily need to make more.  Although the more veg the merrier!  This is a very filling meal – one duck breast will feed you well.

Oatmeal, Cranberry, Bacon, Chocolate Chip Cookies came from a desire to make a slightly themed Christmas Brunch. Theme was Bacon and Eggs, but we weren't planning on a sit-down meal. Rather we thought we would make finger foods that we could enjoy while conversing and opening gifts. These cookies aren't overly sweet, but the smokiness of the bacon, tartness of the cranberries, and the hit of chocolate creates a symphony of perfect cookiness.

Pulled Pork Tacos happened when I realized that we didn't have any beef for Taco Tuesday. OH the humanity! Whatever shall we do?! Yep! That's right! Pull that pulled pork out of the freezer and load it up with taco seasoning, fried peppers and onions. Then toss that into soft taco shells and load them with all of the fixin's for a fast weeknight dinner that will have them asking for Taco Tuesday on Wednesday and Thursday too!

Sourdough Bacon Stuffing

Sourdough Bacon Stuffing is the only thing in this year's Thanksgiving dinner that contained gluten. I made it with fresh sourdough bread, and I had bacon out to make the Fully Loaded Baked Mashed Potatoes, so I used the leftovers in this recipe. 

 

I never stuff the bird when I use stuffing. There are a lot of factors that lead to that decision. Mostly I don't feel that I get a proper cook out of a roasted bird. There is risk of contamination of the stuffing from uncooked drippings, and most importantly, you don't get loads of crunchy bits, leading to fights among guests and family over the coveted crispy stuffing. Feel free to stuff your turkey, or chicken, or not. But whatever you do, enjoy the stuffing.

Thanksgiving and autumn are a time for cozy foods and pumpkin flavored everything. I will admit that I have never liked even the thought of something pumpkin flavored, however I thought that it was about time that I finally acquiesced and made something pumpkin. Pumpkin Pie Cheesecake With Sugar Cookie Crust was actually very good. I will admit to being skeptical, but it turned out that the taste reminded me of gingerbread for some reason. Anyway. Thanksgiving needs Pumpkin Pie, so here you go. Sort of.

I have had a heck of a time finding ribs this summer season, but fall came knocking and suddenly there are ribs on sale almost every week! Finally ribs! Immediately I bought a few. I did the rub thing, but wanted a little something different this time around. Although to be honest the Maple Bacon Ribs are still my biggest request and absolute favorite. So I soaked some apple wood chips in Angry Orchard Cider, then smoked the ribs until tender. Then I made a spicy sweet sauce from Cattle BoyZ Sweet Chilli Sauce and oddly enough, Dr. Pepper. What I ended up with was Smoky Ribs With Dr. Pepper & Chilli Sauce, and they were awesome.
