Tea Marinated Pork Loin Roast

Tea Marinated Pork Loin Roast

with White Nectarines

Posted on August 05, 2016

In the height of summer I am always looking for ways to take my favorite savory dishes and make them feel more seasonal. Sweet, once again, sends pork to a new level of flavor heaven in this recipe This Tea Marinated Pork Loin Roast with White Nectarines takes the spirit of summer and infuses it into an exquisite roast. The best part about this whole thing was that I set the marinade, which looks so pretty, and left for the day to help a friend move. When I came home, I just threw the pork onto a preheated grill for 45 minutes and dinner was pretty much ready.

Strawberry Stuffed Brownies

Strawberry Stuffed Brownies

in Mini Cast Iron Skillets

Posted on July 27, 2016
I may be on some sort of brownie kick. Does two brownie recipes in 3 months constitute a kick? Anyway, I made these Strawberry Stuffed Brownies in Mini Cast Iron Skillets because I had just made fresh strawberry jam. Somehow this very precise jam recipe made extra on our last batch and we ran out of jars. I just had to use it for something super special, my homemade strawberry jam deserves it. So what goes better with strawberries than chocolate? NOTHING!

Maple Rum Apple Turnovers

Maple Rum Apple Turnovers

They’re like apple pop-tarts!

Posted on July 06, 2016
To celebrate National Apple Turnover Day I made Maple Rum Apple Turnovers. Really, who doesn’t need a day dedicated to these flakey, sweet, could-eat-them-for-breakfast, little hand pies? I can’t decide if it was laziness or my easily distracted nature that lead to this recipe. I was just cooking away when I noticed that I had left a bottle of Kraken out. It was “Oh, hey, rum! Let’s add that”. The rest, as you know, is delicious history. Really. They’re gone. All of them. Yum.

Corned Beef On Rye

Corned Beef On Rye

With Horseradish Slaw & Irish Cheddar

Posted on March 17, 2016
I made Corned Beef On Rye With Horseradish Slaw & Irish Cheddar after trying a sandwich at Panera. It was a meaty Panini, and was full of delicious. Being St. Patrick’s Day, I needed to Irish things up a little. So after making homemade Corned Beef, I decided to make an amazing Panini of my own. The trick? The secret? Horseradish Mayo.

Super Perogies

Super Perogies

With Cheese & Chives

Posted on March 10, 2016
I was at a complete loss as to what I should make for supper one night. I was hungry, alone, and it was after 8 pm. I hadn’t pulled anything out to defrost, and driving to a takeout joint seemed like so much work. Then; a shining light from the freezer. Angels sang and inspiration patted me on the back. Super Perogies With Cheese & Chives was born.

Crispy One Pan Chicken

Crispy One Pan Chicken

Marinated in Garlicky Greek Yogurt

Posted on February 25, 2016
Crispy One Pan Chicken Marinated in Garlicky Greek Yogurt is what happens when you go to make butter chicken on the grill and realize that you are totally out of any sort of curry. Yep. PRO TIP: Check for ingredients before you start cooking. Needless to say, I had to get creative with dinner after that. What came of that creativity turned out to be quite delicious, and very garlicky.

Individual Cheesecakes

Individual Cheesecakes

In A Mug

Posted on February 25, 2016
I had about a third of a block of cream cheese, not enough greek yogurt for a meal and a spoonful of sour cream. I also had a craving for dessert. Instead of spreading that cheese on a bagel, I made it into Individual Cheesecakes In A Mug. Okay not a mug because it wouldn’t survive the grill, but a heat safe ramekin of similar size was perfect. If you have a little bit of ingredients but a big sweet tooth, then this recipe is perfect for a little after dinner treat.

Wild Boar Chops

Wild Boar Chops

Marinated in Blueberry Tea

Posted on February 10, 2016
I have a goal of trying as many exotic meats as I can get my hands on. I wasn’t able to get Elk, but while looking I did find some boar chops that looked too good to pass up. Wild Boar, like pork, benefits from sweet flavors, so when a friend generously gave me some blueberry tea, I just had to use it on the boar. These Wild Boar Chops Marinated in Blueberry Tea came out succulent and amazing. The light sweetness of the tea, paired with a perfect reverse sear, and topped with a blueberry barbecue sauce are a little bit of a different take on the romantic dinner for two.
