101 Cloves of Garlic Prime Rib

101 Cloves of Garlic Prime Rib

With Red Wine Butter Injection

Posted on January 11, 2018

This prime rib recipe is nothing short of fantastic. I am pretty sure that Chef Ted Reader read my mind and knew exactly what my barbecue dreams were made of when he decided to make a recipe that involved one of the best cuts of beef on the planet and smother it with 101 cloves of roasted garlic. Originally put up on the site in 2011, I have made this recipe a few times, much to the delight of others. Then again, who wouldn’t love succulent prime rib, roasted on a plank, encased in a flavorful roasted garlic crust? You may want to enjoy some vermouth-wash instead of after-dinner liqueurs because when you eat this grill recipe, things are about to get intense!

Espresso Rubbed Prime Rib

Espresso Rubbed Prime Rib

Deep and flavorful

Posted on April 18, 2017
Did you know that Prime Rib has a day to celebrate its delicious perfection? Well, I did, and in preparation for this hallowed day, on April 27th, I prepared some Espresso Rubbed Prime Rib for dinner. Rubbed with a combination of steak spice, salt, and espresso powder, then slow roasted on my Prestige PRO 500 Gas Grill, and seared to crispy perfection; this Prime Rib made a most delicious dinner.

Carrot Salad With Creamy Dressing

Carrot Salad With Creamy Dressing

And Feta, Raisins, and Cranberries

Posted on April 18, 2017
I’ll be honest, this recipe happened for two reasons. One, I happened to immolate the roasted beet and asparagus side dish that I was going to serve with my Espresso Rubbed Prime Rib. Two, I went WAYYYYY overboard when making some carrot cake for dessert. Luckily that meant that I had loads of perfectly shredded carrots for a Carrot Salad With Creamy Dressing, Feta, Raisins, and Cranberries, which turned out to be a delicious side dish.

The Perfect Sous Vide Rump Roast

The Perfect Sous Vide Rump Roast

with Scotch Gravy

Posted on January 24, 2017
After visiting Scotland, I knew it was time to celebrate Robert Burns Day as only I could, by grilling up something delicious. This Sous Vide Rump Roast with Scotch Gravy paired perfectly with my Grilled Haggis and brought the whole meal together. Using my Joule, by ChefSteps I was able to cook a rump roast to the perfect temperature, then finished it on a hot grill for some pretty succulent beef. Rump Roast is usually reserved for slow cooking due to its tough nature. That’s why using the Joule to cook this meal was ideal. The gravy I made using the juices from the cooked beef, with the addition of a healthy splash of Scotch made for one very delicious Robert Burns Supper. Don’t forget the Neeps and Tatties.

Rotisserie Prime Rib

Rotisserie Prime Rib

With Basil Garlic Baste

Posted on April 22, 2015
April 26th is National Prime Rib Day. What an excellent excuse to indulge and make yourself some Rotisserie Prime Rib With Basil Garlic Baste. Prime Rib is not the least expensive in the world, so having a holiday where you can indulge without feeling bad about it is flipping fantastic. I paired this aromatic crusted, melt in your mouth, beefiness with my favorite potato dish, Potato Galette, and served it with amazing gravy made from the pan drippings.

The Rotisserie Prime Rib Roast

The Rotisserie Prime Rib Roast

This is how!

I just received a forwarded email from a colleague here. It was a request for a recipe, beef on the rotisserie. What a rarely used piece of equipment. I can’t believe I haven’t done more with this! Thank you, Ken, for bringing this to my attention.
