It’s Cinco de Mayo again and you will need something fun and fresh to share with your friends and family for dessert. This Margarita Ice Cream is fantastic, not too sweet, and even gluten free! This recipe tastes just like a Margarita! The lime flavor isn’t as crazy-sour as you think it would be, and the tequila doesn’t overpower. This recipe is easy to make and doesn’t require churning. Serve it off of the Napoleon Himalayan Salt Platter Set for a really authentic Margarita taste. It adds that counterpoint to the sweetness and creates the perfect Margarita flavor. (A real Margarita snob told me this!)

Tasty Taco Pizza is so delicious. Like, how did I never think of doing this before delicious. Try, I am making this again tomorrow night for dinner, delicious. Need I go on?

So I was toodling around the internet and was reading an article somewhere when one of those side bar video ads starts blaring. It’s a cooking segment and they’re talking about Garth Brooks and taco pizza. I think they said that he invented it. Anyway, it was just a light bulb moment. I saw what the end product looked like and knew I just had to make something that amazing sounding right away. As an added bonus, it’s Cinco De Mayo soon, and you can celebrate with some amazingly Tasty Taco Pizza too!

Marinated steak served on a sizzling bed of fresh veggies, cradled in cheese, and wrapped in a delicious blanket of flour tortilla goodness. What I am describing is a staple in our household. What I am describing is   Steak Fajitas On The Napoleon Cast Iron Skillet, with La Grille Roasted Garlic & Peppers Rub. It's a mouthful to read and trust me it's a mouthful to type; but completely worth it in both cases because you need to hear about this! This celebration of Mexican-like flavors is the perfect and simplest dinner for Cinco De Mayo celebrations. Add some cervezas and you have a match equal to queso and jalapeños.

Making Mexican style takeout food to celebrate Cinco De Mayo is fun and flavorful. Utilizing spices in unique ways makes for some interesting meals. Instead of making Enchiladas, I wanted something that would be a little more interesting when cut into. This Stone Baked, Layered Enchilada turned out to be crunchy, tangy, and spicy. Seeing the layers and tasting the flavors when we ate it was about as fun as making it. Think of this Layered Enchilada recipe like a savory Mexican birthday cake. How many layers high can you go?

Cinco De Mayo is just around the corner. If you plan on celebrating, you have to serve food. These Grilled Chicken Enchiladas With Homemade Enchilada Sauce And Refried Beans are spectacular. They don't look like much, but flavor wise? Muy Bueno! So many different layers of texture and taste wrapped into one tortilla! It's like Cinco De Mayo on your tongue. Wait! It IS Cinco De Mayo! 

Now I opted to make everything (except the tortillas) fresh, but you certainly don't have to. And you can definitely taste the quality and difference. I also suggest that you double the recipe for the beans, they're pretty good, and like that Thai Chili Guacamole, which I highly recommend you make and have on hand for this meal, you will want to put that stuff in/on everything.

Grilled Jalapeño Margaritas. I guess that sounds really weird. I mean it does sound really weird. But they're super strangely yummy. My first foray into the land of tequila has resulted in success. This slushy drink, was inspired by a title that I read somewhere, though I may have read like two different recipes and conglomerated them into one. I do that a lot. Mother has a dusting mitt in her car, I totally thought it read disgusting mint. So you can see where this went. Where was I? Oh right. Grilled Jalapeño Margaritas. After slaving toiling joyously in front of a grill all day, something cold and fun is definitely in order. Not to mention it's totally the traditional drink of Cinco De Mayo - I think?

Part of celebrating Cinco De Mayo is having a fantastic dessert to go with your amazing meal. I was going to do some sort of "Mexican" food like a quesadila or chimichanga filled with fruit and chocolate, but I had all these limes and tequila, and let's face it, you know my opinion on cheesecake. So I made Margarita Curd Cheesecake instead. First of all I was quite inspired by a dessert I taste tested at Costco a few weeks back and fully intended on recreating - a lemon curd, crumble topped cheesecake pie, and with Cinco De Mayo around the corner too, I had all the stuff to make a rockin' lime curd. Well I added tequila and things got a little out of hand, and into my mouth. You have to make this delicious, creamy dessert.
