To celebrate National Chocolate Day on October 28th, I created three savory dishes that prove Chocolate isn’t just for dessert. You can check out my Chocolate Rubbed Back Ribs and Chocolate Rubbed Steaks here. After experimenting with a few different applications of chocolate in savory food, it was decided that I had to use the real thing in a dish. Also, it’s nearly November, something warming, like a stew, was definitely needed as well. This Spicy Chili with Dark Chocolate is the strangest chili that I have ever made, though it is certainly the most delicious. If you need a warm bowl of yum on a cool day, you need to try this chili.

Chef Ted Reader’s Coffee Rubbed Porterhouse serves as inspiration for this latest steak creation; Chocolate Rubbed Steaks With Smoked Coffee. Chocolate is not just for those with a sweet tooth. It’s fantastic for use in savory dishes as well. My goal was to add a depth to the natural flavor of steak. The rub successfully did this while creating a beautiful crust once seared on the side burner of my Napoleon Prestige PRO 500 Grill.

I recently had the pleasure of visiting Scotland; the food there gave me a feeling of homey, farm-y-ness that I don’t feel living in the city in Canada. Scottish Dijon Beef Roast came from my desire to relive these experiences. To make it really authentic, you need to get your hands on some Black Angus beef, though a good quality roast will be just as delicious.

Savory Scottish Oatmeal

While in Scotland I tried loads of different and wonderful foods including haggis, black pudding, white pudding, mealies and Skirlie. My favorite out of all of them was Skirlie, a Savory Scottish Oatmeal side dish that is usually served with beef – particularily mince and tatties, (think shepherd’s pie). This is probably due to the fact that one of the main ingredients for this recipe is suet, the raw hard fat found on beef and mutton. Don’t let that strange ingredient phase you. Skirlie is incredible. It’s fragrant, and intensely satisfying!

National Cheeseburger day is on September 18th. To celebrate I created the newest in cheeseburger technology, Cheese Stuffed Cheeseburgers with Cheese On Top. Seriously. There is cheese in almost every inch of these delicious burgers. There shall be cheese for everyone! Or, cheese for no one if you don’t make these amazing burgers and celebrate National Cheeseburger Day.

There is nothing like preparing a delicious meal with someone you care about and then sharing said meal with a group of friends or family. That’s why I made this Beef Tenderloin with Roasted Garlic and Horseradish Crust. This meal was incredible; a spicy and garlicky crust gave the meat a bite that complimented the tenderloin, which had flavor that was beyond succulent.

Bangers and Mash is a British dish remembered with fondness and National Bratwurst Day is on the 16th of August, inspired a German version of this dish.  Easily made in one place, on a Rogue® Gas Grill these brats are cooked down in German beer, then the beer to make gravy with added some caramelized onions. Bratwurst with Beer & Onion Gravy is a deliciously German variation on a traditionally British dish.

My favorite meal to share with my husband’s family is his mother’s lasagna. It is a fond childhood memory. I remember my own mother making it years ago too.  As it happens to be National Lasagna Day, I decided to pay homage to our fond childhood memories, and made my own Homemade Lasagna With Meat and Three Cheeses. I started with my Mother-in-Law's recipe, then I put a bit of a grilled spin on it, but I think you’ll like the results as much as we did.

After making Grilled Chili Cheese Dogs, I was to making other messy foods on the grill, like Sloppy Joes. Of course, I needed to put a proper barbecue spin on this recipe and decided that they needed to be more than sloppy; they needed to be Smokey Joes – Smoked Sloppy Joes. I smoked a big chuck roast until a fork could shred the meat, then added a homemade sauce and served it all on a big bun with a spicy Kale and Horseradish Slaw to top it all off. …So messy and delicious…

While working with Steam Whistle Brewery on the Chill & Grill Contest I developed a marinade that was perfectly suited for beef. I just had to try the marinade right away, so I made Eye of Round Roast with Steam Whistle Marinade. The roast was succulent and flavorful. I served it with some smoky cheddar and horseradish mashed potatoes and, of course, an ice cold bottle of Steam Whistle Pilsner. I reserved a little of the marinade to add to the gravy too, this provided a surprising flavor boost.
