Manufactured in the province of Brie outside Paris, around 770, Brie is one of the more popular types of cheese available. The process combined whole or skimmed cow’s milk and rennet. This mixture was heated, placed in molds and drained, then salted, inoculated with cheese mold, and aged for about four weeks. Brie texture is like butter and there is a hint of fruit in the taste.

This is almost a hot salad. And on a day like today...the weather, by the way is a balmy -17°C with the wind chill, blowing and snowing ... you want something that is bright, cheerful and reminds you of warmer, happier days. So back to hot salad. You read that right. At its most base level, this is just grilled vegetables. But like Shrek, it has layers. Balsamic vinegar and dijon mustard play off the sweet and smoky flavours of the vegetables to create a side dish that is absolutely heavenly.

It is raining, like super raining. Today is grey and, well just plain yucky! What we need is a pick-me-up. FOOD! What better edible pick-me-up than gooey and colourful nachos! These nachos have fresh onions and peppers, and are smothered in cheese. Try some yourself when the weather has got you down.

Risotto. I had never heard of it until watching Hell's Kitchen, my guilty reality-show pleasure. Gordon Ramsey is obsessed with the stuff, and now everyone else is too. So here is a recipe that, although it is unconventional, works really well to produce a light side dish that pleases all.

Before leaving work for the weekend, I overheard a couple co-workers discussing local bar food. Poutine to be precise. So I got to thinking. How could I make this on the grill? This is a meal that is deceptively simple sounding. Really only three ingredients when you get down to it.

Caesar salad is a staple of salads.  Far too many people will only eat a Caesar salad. It is the fall back, when the  kids or the partner are picky eaters, and it goes with any meal like white fur on black pants. This grilled version of the time honored recipe is particularly tasty.

I wrote an article on stuffed peppers that made me think about other vegetables that could be stuffed. While on the tangent of peppers, I thought I would have a look-see for Stuffed Jalapeños. Well  here we go! These bad boys are full to bursting with deliciousness.
