Honey Dijon Glazed Ham

Honey Dijon Glazed Ham

Hamming it up

Posted on March 31, 2015
Honey Dijon Glazed Ham is perfect for a family dinner any time, but I made it for Easter. When you place it on the table for slicing, people will be in awe of the thick and shiny glaze, the aromatic steam and the succulent meat. I've got a small-ish family, and so we always have leftovers, even when making smaller meals. But fear not, because the Honey Dijon Glazed Ham is a superb addition to your lunch box too! Sandwiches, quiches, frittatas, stratta, breakfast, you name it!

Creamy, Crunchy Scalloped Potatoes

Creamy, Crunchy Scalloped Potatoes

Creamy, Crunchy Scalloped Potatoes

Posted on March 31, 2015
Creamy, Crunchy Scalloped Potatoes feature the best of both worlds when it comes to texture. Then there's the flavor. You won't get this kind of awesome from a box. No sir! It may take a little prep work but this side dish is completely worth the added labor. Although, getting into that box of "scalloped potatoes" that's been in your pantry for who knows how long is really a lot of work. This recipe is far easier than trying to stick your thumb through that "perforated" top. And when you can't do that you resort to using a knife, which works, but you stab the packet with the flavor powder in it. The powder goes everywhere and you have the dog licking at the floor and you haven't even gotten to the cooking part yet. Naw, go the route of home made and save yourself the hassle. Plus you get all the flavor!

Cadbury Cream Egg Brownies

Cadbury Cream Egg Brownies

Fudgy, Rich, Chocolatey, Easter Heaven

Posted on March 31, 2015
Cadbury Cream Egg Brownies. What more is there to say about that? Okay well the fact that they're gooey and rich, featuring the epitome of the coveted easter candies to make something that is already one of the best things on earth just that much better. Imagine yourself biting into a dense, fudgy brownie and your teeth sink through a layer of milk chocolate that reveals a hidden gem of creamy egg middle-ness that drips onto your chin!  ...I may be a little passionate about these brownies. Which, I should mention, are perfect for easter dessert.

Wilted Kale Salad

Wilted Kale Salad

With Grilled Vegetables And Homemade Dressing

Posted on March 25, 2015
I have now taught my first grilling class. I needed to prepare a program that covered as many different ways to grill in one lesson. One thing though, it had to be vegetarian. That's where Wilted Kale Salad With Grilled Vegetables And Homemade Dressing came in. Actually a bunch of things crossed my mind, but the main thing was that I wanted to come up with four different meals that incorporated the same or similar ingredients. After class I asked which was their favorite. This Wilted Kale Salad With Grilled Vegetables And Homemade Dressing was number one on the list.

Grilled Vegetable Wraps

Grilled Vegetable Wraps

Like a burrito only better

Posted on March 25, 2015
Having recently discovered the joys of Panera (a sandwich restaurant chain) I've been slightly inspired to make delicious grilled sandwiches. Thing is, the weather needs to be a little bit warmer. Just a little. For my vegetarian grilling class, I decided that Grilled Vegetable Wraps in the style of a panini were in order. Like the Grilled Vegetable Quesadillas, these wraps are stuffed to overflowing with delicious vegetables, different cheeses and super awesome Thai Chili Guacamole

Grilled Vegetable And Quinoa Stuffed Sweet Potatoes

Grilled Vegetable And Quinoa Stuffed Sweet Potatoes

Vegetarian, Gluten Free, Dairy Free

Posted on March 24, 2015
As part of a vegetarian grilling class I taught, we made Grilled Vegetable And Quinoa Stuffed Sweet Potatoes. Superbly healthy, full of protein and nutrients, this colorful dish not only looks spectacular, but tastes pretty dang good too. Lightly seasoned, smoky grilled vegetables pair beautifully with the soft, sweet potato, the cooked quinoa providing that protein pop that you need. Top it all off with a homemade dressing for the perfect meal.

Grilled Vegetable Quesadilla

Grilled Vegetable Quesadilla

With Homemade Guacamole

Posted on March 24, 2015
I am a self proclaimed meatatarian. I won't go out of my way to eat a vegetarian meal. But I was asked to teach a class, the one rule was that it had to be vegetarian. Well, after the Wilted Kale Salad With Grilled Vegetables, the Quinoa And Grilled Vegetable Stuffed Sweet Potatoes, and Grilled Wraps Stuffed With Veggies And Quinoa, we had some leftovers. These Grilled Vegetable Quesadilla With Homemade Guacamole are the result of creatively using what's left for an incredible and delicious meal.

Marinated Beef Skewers

Marinated Beef Skewers

With Spicy Peanut Dunk

Posted on March 18, 2015
I had some beef, but not wanting to fall into a rut, a delicious skillet steak rut mind you, but a rut nonetheless, I decided to make some Marinated Beef Skewers With Spicy Peanut Dunk. Okay well it didn't quite start that way. I definitely knew I was going to marinate the beef, but when I boiled the marinade to create a sauce, it didn't work out. So I got creative with the stuff in the pantry. I found roasted peanuts, and threw some garlic and basil in with that. Added a little curry powder, and gave it a good waz in the food processor. What I ended up with was a crazy good, garlicky dip for the beef, that spread nicely on the naan bread and made the whole meal.

Irish Beef Stew

Irish Beef Stew

Traditional Irish Fare

Posted on March 11, 2015
This Irish Beef Stew is beautiful, amazing, filling and healthy. We had to do something about that, so I added Guinness, and vengeance! Last year I had Irish Beef Stew on the menu for St. Patrick's day, but it failed so badly. The pot that I was using boiled dry and burned! My biggest pot was very nearly ruined. This year I was determined to get it right. I did that and more. Knocked it out of the park and right into next week! You gotta make this stew! But remember that the secret to it is to use a wooden spoon! YOU HAVE TO USE A WOODEN SPOON! Your stew will taste better. Trust me.

Guinness Cheesecake

Guinness Cheesecake

With A Pretzel Crust

Posted on March 11, 2015
You can't have a happy St. Patrick's Day without some Guinness and dessert. Why not combine the two by making some Guinness Cheesecake With A Pretzel Crust. Sweet and salty, full of beer, this dessert has it all! And considering five people demolished a cake meant for eight, yep it is gooood. Celebrate St. Patrick's Day, not with green beer, but with a dessert that covers all the best flavour bases, and maybe even some of the food groups too.
