Smoking meat creates an aromatic and tender meal. It is a long process but gives whatever you make a wow-factor like no other. We spent some time at a friend’s house this weekend and brought the Apollo™ Smoker with us. There, we smoked an eye of round that had been marinating for 24 hours. The end product was second to none, and may be the way I will do roasts from now on!
This roast is a great, if slightly non-traditional, meat dish for the Holiday Rosh Hashanah. It goes well with the Challah Bread, Maple and Sherry Glazed Carrots and Honey Cake. As always when cooking, it’s good to have an assistant.
