We are into the third week of the new year and I seem to be on a red meat jag. I made up these Simple Lamb Steaks and paired them with Pancetta Mashed Potatoes for a little kick, and boy oh boy was this a meal to remember. The steaks were tender, grilled to medium rare perfection. The usual thunk of lamb on the tastebuds is dispelled by the steak spice that has tenderized the meat and added something really good. (Seriously words failing for the goodness of the lamb here!)
Now you may remember me saying that the Plank Smoked Mashed Potatoes for Christmas was my new favourite way to make my mash? Weeeell…I may have another. Imagine crispy pancetta and sautéed garlic in creamy mashed potatoes, flavoured with a pinch of dill and some cream cheese and butter? ‘Scuse me while my eyes roll back in my head and I drool for a few moments.
Now that I have made you wait. How about we get down to the meat and potatoes of the matter. See what I did there?
This meal came together pretty quick. I don’t know about having a protein in your potatoes while eating a big read meat as the main. Most people would think that is needless extravagance. I agree that it was extravagant. But it was an idea that hit me like a shovel to the back of the head. HEY! What if I…? I seriously recommend trying lamb with just the Steak Spice on it though. Silly tender and super delicious. Although I only make food that is delicious.
