It may not be much to look at, but Spaghetti Squash is a fantastic and incredibly versatile addition to any grilled meal. Like roasting sweet potatoes for Baked Sweet Potatoes with Maple Butter this is a set and forget kind of veggie. I cannot emphasize the versatility of Spaghetti Squash either. You can put it in, or on, or under just about anything. If you want to have noodles? Use Spaghetti Squash. You want some crazy sweet crunch in your salad? Use Spaghetti Squash. Did I mention, the recipe is super easy too?
Like I said. Very versatile. I had it with a butterflied pork chop, stuffed with goat cheese. I tossed the Spaghetti Squash with melted butter and a pinch of the rub used on the pork.
