So you have a freezer full of Pulled Pork that you smoked, no wait, that’s me! Well maybe you have that issue too. So yes, Pulled Pork – filled freezer. On a bun is nice with cheese and stuff. But that’s been done, Poutine was good, but again, been there, done that. I am sure that there is an envelope somewhere. I must push it! Envelope… HEY! I have Egg Roll wrappers in my fridge, what If I stuffed them with pulled pork and peppers, onions and cheese!
Seriously folks, this is how my brain works some days. Luckily for us all, it was a great day ’cause let me tell you, these baked egg roll pulled pork thingys were really really good! They’re kind of spicy, very saucy, cheesy and crunchy! I think the only thing missing would have been chocolatey, but I will try that on another day.
Make sure you get the square egg roll wrappers and not the round wonton/dumpling wrappers, however, they would also be VERY tasty. Also. Let these cool for a little while before serving them. They just came out of a 400°F grill, they’re really really hot!
These Pulled Pork Egg Rolls are completely filling! Three each and we were stuffed. So if you’re serving them as an appetizer, be sure that you don’t give your guests too many to eat, or the main course will be too much food, if there is such a thing.
