Fall is coming. I guess I can’t deny it with the weather getting cooler at night, and the trees changing colour. So in acceptance of this shift in seasons I decided to make something a little more hearty. Something worthy of being called fall cuisine, without truly accepting the inevitable. This Prosciutto Wrapped Turkey Breast is delicious and lighter than you would expect. It paired nicely with the sautéd asparagus nicely. I got the warm and fuzzies without needing a sweater. And turkey is a nice change from chicken. Light but flavourful.
This was delectable, and thanks to leftovers, we had bacon-turkey sandwiches for a day or two after! What do you do with your turkey leftovers?
