OH no! The niece and nephew are coming for a visit, but its too hot to bake inside. Whatever shall I do? There is no end to things you can bake on a grill, and these chocolate chip cookies are a prime example of that fact. Not to mention delicious. Sounds crazy doesn’t it? And when I tell my nephew where I baked his cookies, he stares at me with wondering eyes and says, “Like where hamburgers come from? WOW, that’s amazing!”

METHOD

1. Preheat the grill to medium–high heat. Blend the oatmeal in the food processor until it is a fine powder. Add the salt, flour, baking powder, and baking soda, pulsing until well combined; set aside.
2. In a large bowl, cream together butter, brown sugar, and granulated sugar until pale yellow. Add the egg, and vanilla and mix until well combined. Add the flour mixture to butter mixture, and mix thoroughly until blended. Add the chocolate chips, macadamia nuts, and chocolate toffee pieces; mix until combined.
3. Scoop about 1 tsp. of cookie dough and roll into a small ball. Flatten dough ball slightly and place onto plank. Repeat with the remaining dough, placing the balls about 1–inch apart until the planks are full.
   
4. Place planks on the grill and close lid. Plank bake cookies for 10 to 12 minutes, until cookies are golden brown and fully cooked. Depending on how many planks fit onto the grill, cookies may have to be baked in batches.
5. Using a spatula, remove the cookies from the planks and place onto wire racks or a platter to cool. Drizzle with warm maple syrup just before serving.

Quite obviously the nuts are optional, many children now-a-days are allergic.

What a huge success! The visit was punctuated by my nephew running up and telling us how the cookies were made on the barbecue just like a hamburger and hot dog. He just couldn’t believe that something so neat had happened. These cookies are great and the recipe can most certainly be done indoors if you lack a grill. What is your signature cookie recipe?
