When I was little my favorite treat for dinner was my mother’s home made macaroni and cheese. Now that I am older, I can make this dish for myself, or for mom as it is mother’s day this weekend. But as with many recipes, I like to look for a different way to do things. Thanks to Ted Reader, I have a great recipe for my favorite childhood meal on the grill. I can’t wait to make it for mom.

METHOD

1. Cook the macaroni in boiling water until it is barely tender. Drain and let cool. In a large saucepan set over medium-low heat, melt the butter. Sauté the onion for 2 to 3 minutes, until translucent and tender. Stir in the flour and blend until incorporated. Slowly pour in the milk and cream, stirring constantly, until the mixture is smooth.
2. Continue cooking the sauce over the medium-low heat, stirring frequently, until thickened, about 10 to 15 minutes. Whisk in the mozzarella and cheddar cheese until smooth. Remove from heat; add the Bone Dust BBQ Seasoning and add salt and pepper to taste; cool slightly. Preheat grill to medium heat.
3. In a large bowl, combine the cooked pasta with the cheese sauce. Mix well to evenly coat the pasta with sauce. Spray the plank roasting pan with nonstick cooking spray. Pour the pasta mixture into the plank roasting pan.
4. Place the plank roasting pan on the grill; cover loosely with aluminum foil and close lid. Plank bake for 50 to 60 minutes, until heated through and the top is bubbling. Remove from the oven and let rest for 10 minutes before serving.
