Mediterranean Lamb Pita

Mediterranean Lamb Pita

With Pistachio Pesto Wet Rub And Greek Yogurt Sauce

Posted on May 14, 2015
A mouthful in more ways than one, these Mediterranean Lamb Pita With Pistachio Pesto Wet Rub And Greek Yogurt Sauce were absolutely delightful. Even the picky ones enjoyed this meal. I was dubious about the pistachio pesto to begin with, it tasted like it needed something, was missing something, but when we slathered the lamb bites with it, the pairing turned into heavenly morsels of meat. The runny greek yogurt sauce was flavored with garlic, dill and a little lemon pepper for a hit of tangy, garlicky goodness. All of this was piled onto a steamed pita (they're more flexible) and you had some sort of Mediterranean lamb taco thing happening.

Lamb Sliders

Lamb Sliders

Easy and Fancy

I made these Lamb Sliders for Mother's Day Luncheon. I wanted to do something like an afternoon tea, but with a grill spin. I still wanted it a little feminine, but manly enough for my husband to eat without feeling like he should be in a powdered wig with his pinky out. I paired the Lamb Sliders with a simple salad of fresh spinach, arugula, pecans, cucumbers,  and cranberries, and added some Creamy Poppyseed Dressing which added a light and fresh dimension to the whole dish, pairing beautifully with the Sliders.  If you make these for Mother's Day, you will be your mom's hero. Though you can also make these easy little Lamb Sliders for the next big game, tailgate party, or event too, cause they're pretty dang good. Did I mention they're really easy too?

Creamy Onion Poppyseed Dressing

Creamy Onion Poppyseed Dressing

Perfect On Spinach Salad

Posted on May 06, 2015
I prepared Creamy Onion Poppyseed Dressing to go with my Lamb Sliders for Mother's Day luncheon and it paired perfectly. Lamb has an earthy flavor that needs to be lightened up with colorful and bright flavors meaning a fresh salad is perfect, and Creamy Onion Poppyseed Dressing sticks to that salad's bones when you use it.  It's thick, and has all the makings of a perfect dressing. The tang, the sweet and onions.

No fancy tea party, or Mother's Day luncheon is complete without finger sandwich style Berry Curd Shortcakes With Clotted Cream And Fresh Berries for dessert. This recipe was inspired by the tiny cakes and dainty finger sandwiches that you often see at a tea party. I wanted to create that feeling for this specific menu and occasion. Try these decadent and fun little cakes for your next picnic, tea party, or cookout and everyone will be posh and pinkies up in no time.

Grilled Chicken Enchiladas

Cinco De Mayo is just around the corner. If you plan on celebrating, you have to serve food. These Grilled Chicken Enchiladas With Homemade Enchilada Sauce And Refried Beans are spectacular. They don't look like much, but flavor wise? Muy Bueno! So many different layers of texture and taste wrapped into one tortilla! It's like Cinco De Mayo on your tongue. Wait! It IS Cinco De Mayo!

Now I opted to make everything (except the tortillas) fresh, but you certainly don't have to. And you can definitely taste the quality and difference. I also suggest that you double the recipe for the beans, they're pretty good, and like that Thai Chili Guacamole, which I highly recommend you make and have on hand for this meal, you will want to put that stuff in/on everything.

Grilled Jalapeño Margaritas

Grilled Jalapeño Margaritas

Grilled Jalapeño Margaritas

Grilled Jalapeño Margaritas. I guess that sounds really weird. I mean it does sound really weird. But they're super strangely yummy. My first foray into the land of tequila has resulted in success. This slushy drink, was inspired by a title that I read somewhere, though I may have read like two different recipes and conglomerated them into one. I do that a lot. Mother has a dusting mitt in her car, I totally thought it read disgusting mint. So you can see where this went. Where was I? Oh right. Grilled Jalapeño Margaritas. After slaving toiling joyously in front of a grill all day, something cold and fun is definitely in order. Not to mention it's totally the traditional drink of Cinco De Mayo - I think?

Margarita Curd Cheesecake

Margarita Curd Cheesecake

Perfectly Balanced Sweet And Tangy

Posted on April 29, 2015
Part of celebrating Cinco De Mayo is having a fantastic dessert to go with your amazing meal. I was going to do some sort of "Mexican" food like a quesadila or chimichanga filled with fruit and chocolate, but I had all these limes and tequila, and let's face it, you know my opinion on cheesecake. So I made Margarita Curd Cheesecake instead. First of all I was quite inspired by a dessert I taste tested at Costco a few weeks back and fully intended on recreating - a lemon curd, crumble topped cheesecake pie, and with Cinco De Mayo around the corner too, I had all the stuff to make a rockin' lime curd. Well I added tequila and things got a little out of hand, and into my mouth. You have to make this delicious, creamy dessert.

Rotisserie Prime Rib

Rotisserie Prime Rib

With Basil Garlic Baste

Posted on April 22, 2015
April 26th is National Prime Rib Day. What an excellent excuse to indulge and make yourself some Rotisserie Prime Rib With Basil Garlic Baste. Prime Rib is not the least expensive in the world, so having a holiday where you can indulge without feeling bad about it is flipping fantastic. I paired this aromatic crusted, melt in your mouth, beefiness with my favorite potato dish, Potato Galette, and served it with amazing gravy made from the pan drippings.

Baked Potatoes Stuffed With Meatloaf

Baked Potatoes Stuffed With Meatloaf

Topped With Cheesy Mashed Potatoes

Posted on April 21, 2015
Baked Potatoes Stuffed With Meatloaf. I don't know what happened. One minute I am making baked potatoes for dinner, the next minute strange things started happening and suddenly my potatoes were hollowed out and filled with an insane meat mixture that made the mouth moisten. Once sufficiently baked, I used the remaining potato to top these incredible creations, and when they came out of the grill, the clouds separated and a shaft of sunlight hit this miracle creation.

Sweet Garlic Dry Wings

Sweet Garlic Dry Wings

With Spicy Dip

Posted on April 21, 2015
I've done sticky, saucy, and even spicy wings, but I haven't done dry wings since the Lemon Pepper Wings a while back (they're really good by the way you should try them). These Sweet Garlic Dry Wings With Spicy Dip have a caramelized coating of garlic and brown sugar that is at once salty and sweet. Then you dunk it in a creamy dip that you think is going to be something like buffalo ranch, but you're blown away as a spicy mixture of sour cream, sriracha and sambal olek tackle your tongue.
