The month of June is National Soul Food Month. I've been wanting to do Chicken And Waffles for a while now, having never tried them, and National Soul Food Month was the perfect opportunity to do so. This meal is by no means, in any way, the least bit healthy. But it is delicious. For added grillitude, once the chicken was fried, I glazed it over direct heat with maple syrup, 'cause, you know, I had to make it more awesome somehow. I truly recommend making this outside if you can. Frying food inside can be a messy business.

Last week we posted a recipe for Bacon Bourbon Chocolate Chip Cookies on our Facebook page. It was a re-share of a share - well you know how it goes, but I want to thank the Recipe Girl for the original recipe which you will find here!! Basically I couldn't not try making these. I did not make them Gluten Free and they were enough to entice someone who shouldn't be eating gluten to eat at least five cookies! She told me later that it was well beyond worth it. The husband's co-workers? Totally beyond jealous. Seriously. Grown men, carpenters, openly weeping as he eats the cookies in front of them, smirking.

We had a real craving for ribs recently and I just had to act on it. So we made these Candied Pork Back Ribs to fill that void. Usually we make Maple Bacon Ribs, but I wanted to go for something a little different this time round, something special for the first ribs of the season. So I seasoned, smoked, melted and basted my way into these amazing ribs.

I love pizza. I love a good home smoked pulled pork. I decided that the two of these needed to be put together again so that we could eat something awesomely delicious. This Pulled Pork Pizza with Jalapeño Cheddar was sweet and spicy. It rocked our tastebuds, and we ended up eating all of it instead of sharing. In other words, you may want to consider doubling this recipe, because even the leftovers are ridiculously good.

I needed something to serve to guests on a Sunday evening, and I also needed a nutritious breakfast for the next day. So I decided to make some Candied Pecan Banana Bread. This quick bread recipe is not only moist and tasty as any banana bread should be, but it's actually full of things that are pretty good for you too. I used gluten free flour and you couldn't tell the difference, which is rare, and the candied nut topping gave you a satisfying crunch to top it all off. You'd never guess that this was made on the grill. Oh, did I mention that it's also versatile as heck too? You can throw it in a loaf pan for quick bread, muffin tins, mini loaves - which make fantastic little gifts, and even a cake pan if you wanted. You just have to remember to watch that baking time.

I've mostly successfully done a smoked brisket and it was amazing. But I wanted to do a brisket that would make a Texan proud (or at least I hope they'd be proud). So instead of smoking, this time I opted to make a Foil Roasted Brisket in honor of National Brisket Day on May 28th.

May 28th is National Hamburger Day. It's also National Brisket Day. Though I think we should just call it what it really is - National Holy-Cow-Beef-Is-Delicious Day. What do you think? Anyway, I had loads of leftover Foil Roasted Brisket and I just had to make Brisket Burgers With Broccoli and Brussels Sprouts Slaw with them. These burgers are stuffed with chunks of Havarti cheese and chopped brisket, and topped with even more brisket. I made this super crazy cole slaw, but used broccoli and Brussels Sprouts instead of traditional cabbage, then I put the slaw on top of everything. Trust me you won't even need ketchup!

Homemade Mac 'N' Cheese With Goat Cheese, well if you remember last week, we celebrated Cheese Soufflé Day with Easy Goat Cheese Soufflés, and the cheesy delicious base that made it all come together was so good I wanted to turn it into my cheese sauce for some good 'ol Mac 'N' Cheese. Let me tell you, you have been making macaroni and cheese wrong for a long time and it's time to change our ways. Adding a crunchy cheese flavored cracker top and baking it until it's super crisp doesn't hurt either.

If you have never made one, this Easy Goat Cheese Soufflé is the perfect recipe for you to start with. Having never made a soufflé before, I was scared. The only reference and experience that I have ever had was the sitcoms where the woman pulls this beautiful soufflé from her oven and there's a loud noise causing it to collapse to the sound of a laugh track. So imagine my panic as the cat runs up and down the halls bouncing off the walls. I thought the same thing would happen to me. But, no. Everything was perfect and in no time we were eating something that resembled a mousse and perfect scrambled eggs but tasted like the most incredible mac and cheese you have ever eaten. Served with a Grilled Pear Salad, it was the height of decadence.

Grilled Pear Salad With Feta is a surprising salad. The smoky sweet, warm pears are matched well with the feta cheese for a rich, lavish flavor without spending the big bucks. We made this to go with the Easy Goats Cheese Soufflé because I didn't want to have something too heavy with it. All in all, this was a very satisfying and light meal that didn't leave us wanting more.
