There is something to be said about certain foods providing comfort when you’re not feeling up to it. This mushroom soup is a great example of how something can just make you feel good. The rich broth shines and the meaty mushrooms fill you with a sense of warmth. Or just serve it up as soon as it is ready, especially with a nice grilled cheese sandwich, or some fresh bread and butter. This is also a great  ”make it and freeze it” meal for one or the whole family.

METHOD

1. As mushrooms soak up liquids like a sponge, it is a good idea to just wipe them down with a damp cloth. Remove the stems, they can be used for something else if you like.
2. Mix together the garlic, olive oil and lemon juice. Brush the mushrooms all over with the mix and then allow them to marinate, gill side up, for 10 to 20 minutes.
3. While you are waiting for the mushrooms, prepare the beef stock and boiling water. Bring them to a simmer and add the mushroom sauce. Continue to simmer covered.
4. Rub the grids with a little oil and preheat the grill to medium high, about 400°F. If you’re using smaller mushrooms, I recommend using a grill basket.
5. Cook the mushrooms for 6 to 8 minutes per side or until they are lightly charred. Then slice thinly and add to the simmering stock.
6. Season the soup with salt and pepper to taste and serve sprinkled with parsley.

Mushroom soup may not be your particular comfort food, maybe you like something else, like Chicken Soup, but one thing is for sure.
